Gluten is a general name for the proteins found in wheat, rye and barley. It is commonly used because it helps food maintain its shape but doesn’t actually have essential nutrient value. It’s found in a lot of typical foods…usually the delicious kind - like pizzas, pasta, cereals, crackers and most items you find at any bakery.
There are some people that cut out gluten from their diet because they suffer from celiac disease. Celiac disease is a serious condition where the body’s immune system causes damage to the small intestine so you’re unable to absorb any nutrients. Around 1% of the population has this condition and only 30% of those are diagnosed. There is a much higher percentage of people that have non-celiac gluten sensitivity so they also turn to a gluten-free diet to ease symptoms like abdominal pain, constipation, and bloating.
Our video shows an experiment where four people go on a gluten-free diet for a month and they talk about their experiences and how their bodies feel along the way. Most of them found the experiment hard to bear, because like I said, how can you stay away from these usual kinds of yummy foods! The gluten-free options offered at restaurants are usually not as tasty. They were pleasantly surprised, however, to have lost some weight by being on this diet!
Okay, let’s pause for a moment and have a listen to our pronunciation challenge. Here is our sentence.
Sentence: Gluten-free diets that cut out all food with wheat, barley, and rye have become extremely popular in the last couple (of) years,
Pronunciation tips: Gluten (I read this word as is, but for Americans, the ‘t’ is almost silent, you can listen to the way it’s read in the video for a better example because it’s hard for me to pronounce it that way) Wheat (pronounced as ‘weet’) Barley (two syllables) Rye (one syllable word, sounds like ‘rai’ ) Extremely (sounds like ex-dream-ly)
Vocab: 1. gluten KK[ˋglutən] IPA/ˈɡluː.t̬ən/ (n.) 麩質 a protein that is contained in wheat and some other grains
Example: Since potatoes are a vegetable and not a grain, that inherently makes them gluten-free. 因為馬鈴薯是一種蔬菜,而不是穀物,所以本質上屬於不含麩質。
2. -free KK[-fri] IPA/ -friː/ (suffix) (用於詞尾)免費的 used at the end of words to mean 'without' or 'not containing'.
Example sentences: Can you please check if this drink is sugar-free? 請幫我確認這個飲料是否不含糖?
You need to pay extra money if you want to watch YouTube videos ad-free. 你需要多付一些錢才能觀看中途不會出現廣告的YouTube影片。
3. extremely KK[ɪkˋstrimlɪ] IPA /ɪkˈstriːm.li/ (adv.) 非常;極端;極其 very
Example: She is extremely worried about her university entrance exam results. 她非常擔心自己的大學入學考試成績。
Outro:
Genetics play a major role in gluten intolerance. You are more prone to developing this condition if there’s someone in your family that has it already. Some people will show symptoms when they start eating gluten as a child, whereas for others, symptoms might suddenly begin to develop only in adulthood. If you think you might be sensitive to gluten, it’s important to get tested for wheat allergy and celiac disease.
If your doctor advises you to cut out gluten from your diet for medical reasons, don’t despair! Many whole foods are naturally gluten-free, including fruits, vegetables, dairy products, fresh meat, fish and oils. It definitely sounds like a much healthier diet. It just takes a little more effort to execute because gluten lurks in so many products, including soy sauce and some frozen vegetables in sauces. Even medications, supplements and vitamins can contain traces of gluten. Have you ever gone on a gluten-free diet? Please share with us in the comments!
