  • Hello everyone! I am Aarti Madan, and you're welcome to my channel.

  • Today, we're going to make delicious fluffy pancakes!

  • While they require less ingredients, I'll be teaching

  • you techniques on how to make them soft and fluffy all the time.

  • Do watch my video till the end,

  • as I will share these techniques during and at the end of the video.

  • For this recipe, we'll need refined flour, powdered sugar, melted butter, egg,

  • baking powder, baking soda, vanilla extract, salt, flavourless oil,

  • vinegar, and milk. These two will be used to make buttermilk.

  • First, add vinegar to lukewarm milk. Do not use cold milk.

  • If you don't have white vinegar, you may use 1 tbsp lime juice.

  • Mix and keep it aside for 10 mins.

  • For the dry ingredients, we'll sieve them first.

  • We'll add Refined Flour,

  • Powdered Sugar,

  • Salt,

  • Baking Powder,

  • Baking Soda,

  • Now sieve and mix all of them together.

  • Hence, we need both of them in this recipe.

  • If you don't have powdered sugar,

  • you can mix regular sugar with your buttermilk.

  • So our dry ingredients are ready.

  • Make sure you always prepare them together.

  • After 10 mins, the buttermilk has thickened and it's ready.

  • Now add eggs.

  • Make sure all your ingredients are at

  • room temperature and not chilled.

  • Mix it well.

  • We'll be mixing all the wet ingredients together.

  • Next, add melted butter.

  • Vanilla Extract

  • If you don't have it, you can add a pinch of cinnamon powder.

  • Keep mixing the wet ingredients together.

  • The mixture is now ready.

  • Now add the wet ingredients to the dry ingredients in one go.

  • Do not add them gradually and mix because this will make the flour release gluten,

  • which in turn will make your pancakes hard. Never overmix your batter.

  • Mix it gently scraping the sides and the bottom.

  • Use only a silicone or wooden spatula, do not use a whisk.

  • Our pancake batter is ready.

  • Don't worry if you don't see a perfectly smooth batter here.

  • Now, add butter and oil to a pan.

  • Adding oil ensures that your butter doesn't burn.

  • Heat the pan on medium heat/flame.

  • Now pour the batter on the pan.

  • Make sure you make small pancakes and not big ones.

  • If you make big-sized pancakes, they will cook from the sides

  • but not at the center

  • so they won't turn out fluffy.

  • You can see that it's got an even colour and a fluffy texture.

  • One more thing, never press your pancakes with the spatula.

  • This will break the air generated inside the pancakes

  • Now let it cook for 1-2 mins.

  • The pancake is ready.

  • If you think you need more oil & butter, you can add them.

  • I'll not suggest using excess oil as it makes the

  • pancakes greasy. So always wipe it off, if excess.

  • Our 2nd pancake is also ready.

  • Likewise, make all your pancakes

  • and top them off with powdered sugar and maple syrup.

  • Do make these delicious fluffy pancakes and enjoy!
