[蝦] 嘿大家好,今天我要做烏龍麵 [Dried sardines] Homemade udon noodles are so much better than pre-made noodles [沙丁魚乾] 自家製的烏龍麵比現成的烏龍麵好很多喔! [Kombu] and the ingredients are actually very, very simple. [昆布] 而且材料也非常簡單! [Bonito Flakes] It's just salt, water, and flour. [鰹魚片] 也只需要用到鹽、水和麵粉。 [Tempura Flour] So if you get a chance, please give it a try. [天婦羅粉] 那麼如果有機會的話,就試試看吧! First, I'm going to make the noodles. 首先我要先來製作麵條! Sift the flour in a bowl. 把篩好的麵粉放進碗裡。 Dissolve salt in water and mix it into the flour. 把鹽溶在水中然後再跟麵粉混合。 Knead the flour and make it into dough. 把麵粉捏成麵團 Put the dough in a bag and step on it. 把麵團放進袋裡,然後踩它吧! The more you do this, the better the texture will be. 踩越多下,麵團的質感就越好喔! Once the dough becomes somewhat flat, fold it and repeat this process a few more times. 當麵團變得有點平的時候,把麵團折起來,然後重複這個動作幾次。 Some udon stores do this step for more than an hour to get a better texture. 有些烏龍麵店會至少做這個動作一小時以上,以達到更好的質感 Oh, hi Haku. What's up? 噢,嗨 Haku,怎麼了? Then, rest the dough for about an hour. 然後,把麵團放置大概一小時 While resting the dough, let's prepare other ingredients for tempura. 當麵團在發酵的時候就來準備天婦羅的材料吧。 Shred the carrot. 切紅蘿蔔 Cut off the tip of eggplants and make it into a fan shape. 把茄子的頂端切掉,然後切成扇子狀 Rub off the hair of okra with salt 用鹽巴磨掉秋葵的毛 and make some holes so they don't explode while deep-frying. 然後再上面戳些小洞,這樣油炸的時候就不會爆開 Cut off the tip of the tail and squeeze the liquid out of it. 把尾巴的末端切掉,把裡面的水分擠出來 Then, cut the muscle strings 然後,切斷腹部的筋 and press them so the shrimp doesn't curl while deep-frying. 然後壓一下,這樣炸的時候蝦就不會捲起來 Now, let's flatten the dough like this. 現在,這樣把麵團弄平 Make sure to coat it with flour. 確定麵團都沾上麵粉喔! Then, fold it and cut it into noodles. 然後把麵團折起來,再切成麵條 Or, you can just use pasta machine if you have one. 如果你有麵條機的話,也可以用喔! Let's make the soup. 來弄湯底吧 Add dried sardines, kombu, and water in a pot. 把沙丁魚乾、昆布和水放進鍋子裡 Right before it starts boiling, take them out. 在水沸騰前把它們撈出來 Add thick bonito flakes and boil it for a few minutes. 然後把厚的鰹魚片放進去,再煮幾分鐘 Turn off the burner and add thin bonito flakes 把火關掉,再把薄的鰹魚片加進去 and wait for about 5 minutes until they all sink. 等大概 5 分鐘直到鰹魚片下沉 Filter the soup with a paper towel. 用廚房紙巾過濾湯汁 Add a teaspoon of soy sauce and pinch of salt. 加一茶匙醬油和一些鹽 You can also just buy soup powder and mix with boiling water as well. 你也可以買現成的湯粉然後加進水裡煮 Now, add water to the tempura flour and make batter. 現在就把水加進天婦羅粉裡,弄成麵漿 Coat the ingredients with flour first and then batter. 先將材料沾滿麵粉,然後再沾上麵漿 Oil temperature should be 180°C. 油溫180度 Boil the noodle for about 10 minutes. 麵條煮大概 10 分鐘 Place everything in a bowl to finish. 最後再擺盤就完成了!
