  • The fried black sugar

    我們的炒黑糖

  • is a traditional skill of our community.

    是我們社區傳統的一個技術

  • How we make it here in Ximdi

    溪美社區的做法是

  • is one portion of sugar cane syrup,

    一份的糖母

  • one portion of light brown sugar,

    一份的二砂糖

  • one portion of sugar cane juice,

    加上一份的甘蔗汁

  • and a little bit of edible lime powder

    再加上一點點的食用石灰

  • to get rid of impurities.

    用來清除雜質

  • We have to keep stirring for about 30 minutes

    必須攪拌大約三十分鐘

  • until everything dries out to powder.

    一直到炒成粉末狀為止

  • Sugar cane syrup is made from

    其中糖母是用

  • boiling down extracted sugar cane juice.

    甘蔗榨成汁所熬煮出來的成品

  • There is a 90 percent chance of success by our method.

    我們的操作方式大概九成都會成功

  • There is still a chance of failure,

    但還是有部分會失敗

  • especially if you're a novice.

    如果是生手 失敗率蠻高的

  • For those more experienced, the chances of success are higher.

    熟手失敗率就比較低一點

  • There is more than meets the eye

    看起來很簡單的工作

  • for this seemingly easy job.

    原來並不簡單

  • You have to control the fire

    要控制火侯

  • and also adjust the stirring frequency.

    又要配合攪拌的速度

  • Everything is all up to experience and skill.

    全都要靠經驗與技術取勝

  • Now we're frying the brown sugar,

    我們現在正在炒黑糖

  • and we have to wait about 10 minutes more.

    還需要再等大約10分鐘左右

  • After 10 minutes

    10分鐘後

  • Wow! So that's how brown sugar is made.

    哇!原來黑糖是這樣製作的

  • Let me try some!

  • You can taste the sugar smells good,

    糖的味道非常香濃

  • it's not too sweet,

    吃起來不會太甜

  • but it has the smell of brown sugar.

    但是可以聞到黑糖的香氣

  • In the rural countryside, people often add brown sugar to tapioca  

    在農村裡常常會把黑糖泡樹薯粉(葛鬱金)

  • to beat the summer heat and cool themselves off.

    用來消暑、解熱

  • It's also a natural healthy food.

    也是天然的養生食材喔

  • It's the special drink in this community,

    這是溪美社區的特色飲品

  • and it's very good for summer.

    非常適合夏天時來品嚐

  • I can smell the scent of the sugar cane.

    可以聞到蔗糖的香氣

  • It tastes like brown sugar water.

    喝起來很像黑糖水

  • After trying the delicious brown sugar,

    品嚐美味的黑糖

  • next, come make caozaiguo with me !

    接下來跟倍安一起製作「草仔粿」吧!

  • We are going to make caozaiguio.

    我們現在要來做草仔粿

  • And this grass is Gnaphalium (Jersey cudweed),

    這是鼠麴草

  • and after they're made, they look like this.

    這是和糯米糰攪拌後的樣子

  • Oh? Even the wrapping of the caozaiguo is handmade?

    喔!草仔粿連皮也要自己做喔!

  • I have put some more back into it!

    我要多用點力氣才行啊!

  • We've to push a lot to make it,

    拌草仔粿要非常用力

  • and it's like playing the clay.

    就像在捏陶土一樣

  • Making this is not easy,

    製作過程非常不容易

  • and this lady is more experienced.

    這位大姐的功夫非常純熟

  • Though I'm tired,

    感覺有點累

  • it's kind of fun.

    但是非常地好玩

  • It's almost done.

    就快做好了

  • First, we have to put this powder on our hand.

    首先,雙手先沾點糯米粉

  • And take this, and then put the fillings on it.

    接著拿一張糯米皮,放上餡料

  • The ingredients are, some pork, and bamboo shoot,

    餡料有豬肉、竹筍

  • some dried shrimp, and salted radish.

    蝦米和菜脯

  • It's kind of difficult.

    其實蠻難的

  • Wow! The stuffing looks delicious!

    哇!內餡看起來好美味啊!

  • It's really interesting when everyone is making caozaiguo together.  

    大家一起做草仔粿真的非常有趣

  • We finished in the blink of an eye.

    一下子就完成了,

  • The finished product still has to be steamed before we can eat it!

    做好的成品要蒸過才能吃喔!

  • Now we are waiting for the water boiling.

    我們現在在等水煮沸

  • and then we're going to steam them.

    接著就要蒸草仔粿了

  • After 10 minutes,

    稍等10分鐘

  • it will be finished.

    草仔粿就蒸好囉

  • After 10 minutes

    10分鐘後

  • Now, caozaiguo is finished.

    草仔粿蒸好了

  • We can try it.

    我們來嚐嚐看

  • The exterior is very chewy, like mochi.

    這外皮非常地有嚼勁,吃起來很像麻糬

  • And the fillings inside,

    內餡的部分

  • you can taste the bamboo shoot.

    可以吃到筍乾

  • It's very crispy,

    非常地脆嫩

  • and so it's the very good taste of the caozaiguo.

    這就是美味的草仔粿

  • This is our Ximei Community's taiko drum team.  

    這是我們溪美社區的太鼓隊

  • Oh, they have some special show for us!

    喔~溪美社區還準備了特別的表演呢!

  • Now we're in Niousyu cattle market in Shanhua.

    我們現在來到善化牛墟

  • People used to trade cattle before,

    這裡從前是買賣牛隻的地方

  • so the name has the Niou, meaning cattle.

    因此地名中才有「牛」一字

  • It's still popular although the supermarket is spread.

    雖然現在超市普及,牛墟仍然非常熱鬧

  • You see a lot of people here.

    可以看到這裡人潮眾多

  • The biggest difference is now here sells everything but cattle.

    唯一的差別是 現在這裡已經沒有牛隻買賣

  • So let's go and see what's in here.

    讓我們來看看這裡都賣些什麼

  • Auntie, can I have a bowl of beef soup?

    阿姨我要一碗牛肉湯

  • (Do you want a small bowl?) Yes, a small one please.

  • Shanhua is famous for its raw beef,

    善化的溫體牛非常有名

  • you definitely can't miss it if you come to Niousyu.

    來牛墟千萬不要錯過喔!

  • In the Niousyu, you can eat the breakfast of Tainan people.

    可以品嚐到臺南人的道地早餐

  • It's the beef soup.

    牛肉湯

  • You can taste the sweet of the beef in the soup.

    牛肉湯中可以喝到牛肉的鮮甜

  • So the soup is very rich.

    湯非常地營養

  • The beef is tender.

    牛肉非常地軟嫩

  • So you can eat the beef with the ginger slice.

    吃牛肉時可以搭配薑絲

  • There are also different Taiwanese dishes here.

    這裡也有不同的臺灣在地美食

  • So you can come here to buy what you love.

    可以來這裡買自己喜歡的

  • It sells many kinds of herbs, like rosemary.

    這裡也有販售許多藥草,例如迷迭香

  • You can add it in your dishes.

    迷迭香可以入菜

  • You can smell the aroma of rosemary.

    可以聞到迷迭香的香氣

  • It also sells some seedlings, like onion.

    這裡也找得到各式幼苗,像是洋蔥等等

  • And you can plant them in your own garden.

    我們買來可以種在自家庭院

  • You can see the fish is so big!

    這條魚好大呀!

  • It's different from other traditional market

    牛墟和其他傳統市場不同

  • that you can find some special cuisine here,

    這裡有很多特色美食

  • and some clothes, and everything.

    還有找到服飾和各種想得到的商品

  • This cattle market, Niousyu, only opens Nine days per month,

    牛墟每月只營業九天

  • only when the date's last digits are 2, 5, and 8.

    營業日期為日期尾數2、5、8的日子

  • Like January 2nd, 5th, 8th, 12th, 15th, 18th,

    例如1月2日、5日、8日、12日、15日、18日

  • and 22nd, 25th, and 28th.

    22日、25日,及28日

  • So when you're in Shanhua,

    如果你來善化旅行

  • you can come here , Niousyu, for eating and shopping.

    記得來牛墟品嚐美食,逛逛市集

  • And to the community to experience the local life.
