字幕列表 影片播放 已審核 字幕已審核 列印所有字幕 列印翻譯字幕 列印英文字幕 Hi, my name is Yu Li, and I am the owner of Tang Hot Pot in Chinatown. 嗨,我是 Yu Li,我是中國城唐鍋的老闆 Hot Pot is one of the most popular cuisines in Chinese culture. 火鍋是中國文化中最受歡迎的料理之一 You put a simmering soup in the middle of the table, and then you can choose different 把燉湯放在桌子中間,然後可以選擇 flavors of broth. 不同口味的鍋底 The one we serve at Tang Hot Pot is the spicy beef tallow broth. 我們在唐鍋提供的是麻辣牛油鍋底 You cook it with beef fat and a lot of Chinese ingredients and spices, like chili peppercorn, 以牛油和許多中式成分與香料一起煮,像是胡椒子、 star anise, dry chili, and goji, so it really has that complex flavor that is unique in 八角、乾辣椒、還有枸杞,所以有四川火鍋 Sichuan hot pot. 獨特的複合風味 This is actually our signature Tang Pot. 這就是我們的招牌唐鍋 Inside is the pork bone broth cooked with chicken, and outside is the spicy beef tallow. 內鍋是豬骨湯和雞肉,而外鍋是麻辣牛油 The first thing in hot pot you would do is pick a dipping sauce. 吃火鍋時第一件事就是挑選沾醬 The traditional dipping sauce you match with the spicy broth is sesame oil. 適合麻辣湯底的傳統沾醬是麻油 Here you see our Sichuan Adventurer Platter. 這裡是我們的四川探險家拼盤 We have swamp eel and pork blood, which people might have never heard of in a restaurant 有沼澤鰻和豬血,大家可能不曾在餐廳 before. 聽過 But if you want to taste authentic Sichuan cuisine and see what they really eat there, 如果你想品嘗道地的四川料理並知道當地人吃什麼 this would be the platter you order. 你該試試這一盤 I always recommend that people put in the vegetables first, because it takes the longest 我總是建議大家先放進蔬菜,因為要煮最久 time to cook, and so the vegetables won't absorb the flavor of other ingredients. 而且這樣蔬菜才不會吸收其他食材的風味 After I put in the vegetables, the next thing I recommend is putting in the meat and the 放進蔬菜後,建議加入的下一樣食材是 organs. 肉和內臟 I just put in the beef tongue. 我剛放入了牛舌 Dip it nine or 10 times until you don't see any red part on the meat. 涮 9、10 次直到看不見肉帶紅色 It might be a little spicy. 可能會有一點辣 The next thing I would put in is the beef tripe, which is also called beef stomach. 接下來我會加入牛肚,也稱為牛胃 It's one of the signature dishes in Sichuan cuisine. 這是四川料理的代表之一 Eight seconds and then this is good to eat. 涮 8 秒鐘就很好吃了 The meat I'm putting in now is prime ribeye. 我現在放進的肉是肋眼 Since the meat is so fresh and premium you only need to put it in for eight or ten seconds, 因為這塊肉很新鮮又優質,只需涮個 8 到 10 秒 and then you can eat it. 就可以吃了 I like to eat my meat in the clear broth, so I can get the most taste out of the meat. 我喜歡吃原汁原味的肉,可以嘗到最多的肉味 At last, I recommend putting in the pork blood, the swamp eel, and the chicken gizzard. 最後,我建議放入豬血、沼澤鰻、還有雞胗 It's better to eat them after you boil them for two or three minutes, so they can absorb 煮 2 到 3 分鐘後再吃比較好,這樣它們可以吸收 all the flavor that's already in the soup. 所有已經融入湯底的味道 I recommend people put in the seafood after meat so the broth won't taste like seafood. 我建議海鮮要在肉類之後加,湯頭才不會嘗起來像海鮮 Last, I would put in the starches, like the vermicelli noodles. 最後,我會加入澱粉類,例如河粉 Any starch will absorb all the flavors and thicken the soup. 任何澱粉類都可以吸收所有風味並使湯頭更加濃郁 But everyone has their own taste.
