with short ribs soup

and you can see Jin Gen Hua mainly growing in the east part of Taiwan
你可以看到大部分的金針花田大概在台灣的東岸
This flower it is low in calorie
金針花是低卡
and it contain 20 times more iron than lettuce or spinach
金針花的鐵質也極高
and here's a farmer tried to dry the Jin -Gen Hau
這邊有農夫正在曬剛採收的金針花
once it harvesting this is a fresh
這是剛採收的金針花,
version about to get dry
也可以馬上煮來食用
and that is a cool dog
這個有金針花的狗狗超酷
to make the soup you will need a handful of Jin Gen Hua
你需要大約(巴掌)大的金針花
you can get in most Chinese supermarket or just make friends with Taiwanese
你可以在很多中國超市找到,或是跟台灣人作朋友吧
it and this is what it looked like and wash them well
金針花還是有些農藥,所以建議在流水下好好清洗
and soak it for about two hours
洗好 放室溫水約2小時
add some dry mushroom as well
也可以放些乾香菇
You need about 500g or more pork ribs
可以放入約500g 的排骨肉
and dice it into small chunks

get a strong and sharp head knife for snacking
用重頭的菜刀切會比較順
season the ribs with some soy sauce sugar and

peper and add some corn starch
用一些 醬油 /糖/鹽/胡椒 調味

再放一些 地瓜粉(或麵粉) 都可
take the hard bit out and keep the vegetable stock (soak water)
等下要來煎一下

這個方式可以去除金針花的的酸味
till it slightly brown
提高金針花的味道
move it into a stockpot for stew it later
中溫油來煎一下金針花 和香菇吧
sauted the pork ribs brew
煎到有點變色
till it get pretty brown and caramelized
再把煎好的金針花和香菇放進湯鍋
in this way bring the best flavour out of the pork
現在來煎排骨吧
for the pork stock later
用高溫煎排骨到變深色
now get ready to assemble everything together add the Jin Gen Hua
這樣豬的香味才會再比較短的時間煮出來
and add the pork ribs
現在所有東西組合起來吧 ...先把金針花
cover it with water
放入豬排骨肉
and some remaining vegetables stock
放入水蓋滿材料
simmer for about 30-40 minutes
放入金針花浸泡的湯汁
and if you can put in oven, I always recommend
小火燉30-40分鐘
170 for 30-40 minutes (rest for 30 minutes) just get more even and smoother result
比較建議用烤箱煮湯
after it cook
這樣受熱都會比較均勻
sprinkle with chop spring onion and it is ready to serve
170-180 c 煮30分鐘後, 放出來置放30分鐘休息
mmm
放些切好的青蔥 (試一下湯頭來調味) 就好了
