(黃扭 按上一集) 金瓜米粉配甚麼好 Accompany it with Jin Gen Hua pork ribs soup 加個金針花排骨湯 and everything will make sense 一切都很合理阿 Hello, and welcome to the Kao can Cook 哈瞜 歡迎來到 "靠~~下廚" Taiwanese Kitchen 台灣風廚房 and today we are going to (恐怖的鸚鵡...汗) 今天我們要作 make Jin Gen Hua can also call Orange Day Lilly Jin Gen Hua 金針花 Orange Day Lilly with short ribs soup 排骨湯 this beautiful field of Jin Gen Hua is harvest in 這滿山滿谷的金針花 July and August in Taiwan 通常都是在七八月收成 If you start from UK here then just drag the map all the way 從UK倫敦地圖....滑鼠拉到 and that you can see taiwan where I am come from 我的家鄉台灣 and you can see Jin Gen Hua mainly growing in the east part of Taiwan 你可以看到大部分的金針花田大概在台灣的東岸 This flower it is low in calorie 金針花是低卡 and it contain 20 times more iron than lettuce or spinach 金針花的鐵質也極高 and here's a farmer tried to dry the Jin -Gen Hau 這邊有農夫正在曬剛採收的金針花 once it harvesting this is a fresh 這是剛採收的金針花, version about to get dry 也可以馬上煮來食用 and that is a cool dog 這個有金針花的狗狗超酷 to make the soup you will need a handful of Jin Gen Hua 你需要大約(巴掌)大的金針花 you can get in most Chinese supermarket or just make friends with Taiwanese 你可以在很多中國超市找到,或是跟台灣人作朋友吧 it and this is what it looked like and wash them well 金針花還是有些農藥,所以建議在流水下好好清洗 and soak it for about two hours 洗好 放室溫水約2小時 add some dry mushroom as well 也可以放些乾香菇 You need about 500g or more pork ribs 可以放入約500g 的排骨肉 and dice it into small chunks 切小塊 get a strong and sharp head knife for snacking 用重頭的菜刀切會比較順 season the ribs with some soy sauce sugar and 一氣呵成切 peper and add some corn starch 用一些 醬油 /糖/鹽/胡椒 調味 for the saute process later 再放一些 地瓜粉(或麵粉) 都可 take the hard bit out and keep the vegetable stock (soak water) 等下要來煎一下 before we started pat dry with kitchen towel 金針花拿出,把硬梗切掉,然後可以留住泡金針的湯 getting frying pan and we are going to sauted the Jin Gen Hua flower 把金針花放乾 till it get a bit brown 用炒菜鍋 把金針花煎到 and this process will bring you the 稍微變色 special fragance of Jin Gen Hua , let's fried/saute the Jin Gen Hua and Mushroom 這個方式可以去除金針花的的酸味 till it slightly brown 提高金針花的味道 move it into a stockpot for stew it later 中溫油來煎一下金針花 和香菇吧 sauted the pork ribs brew 煎到有點變色 till it get pretty brown and caramelized 再把煎好的金針花和香菇放進湯鍋 in this way bring the best flavour out of the pork 現在來煎排骨吧 for the pork stock later 用高溫煎排骨到變深色 now get ready to assemble everything together add the Jin Gen Hua 這樣豬的香味才會再比較短的時間煮出來 and add the pork ribs 現在所有東西組合起來吧 ...先把金針花 cover it with water 放入豬排骨肉 and some remaining vegetables stock 放入水蓋滿材料 simmer for about 30-40 minutes 放入金針花浸泡的湯汁 and if you can put in oven, I always recommend 小火燉30-40分鐘 170 for 30-40 minutes (rest for 30 minutes) just get more even and smoother result 比較建議用烤箱煮湯 after it cook 這樣受熱都會比較均勻 sprinkle with chop spring onion and it is ready to serve 170-180 c 煮30分鐘後, 放出來置放30分鐘休息 mmm 放些切好的青蔥 (試一下湯頭來調味) 就好了 taste pretty good 歐 好吃ㄟ love the ribs, and it is crunchy 最喜歡咬下軟骨好好吃 ( does it melt easily) 有軟骨的感覺 kala kala (sounds ) 誇拉 誇拉的 and bit like my cat bite the mouse 像我家貓抓到那隻小老鼠 誇拉誇拉 (ill.....) ....疑.(噁)... the soup almost fried my eyebrows, but still taste alright 皮金針花湯 險炸眼皮排骨 好吃 there you go, that is our Jin Gen Hua Pork Ribs soup for today 好 這就是今天的金針花排骨湯 and the if you want to know more Taiwanese 如果你想知道更多台灣菜 recipes or something you like to see me cooking please keep your comment below 或其他的食譜,請在底下留言跟我分享 and the you can keep in touch by subscribe to my channel 你可以分享或關注我的頻道 and the thank you for watching,bye! 謝謝你們收看 掰掰
