So the first thing I've got to do is make a marinade for my steak. 我要做的第一件事情是先製作醃料來醃牛肉 The steak we are going to use today is skirt steak, and 我們今天用的牛肉是側腹橫肌牛排 this marinade will just tenderise it, and really bring out the flavour. 這個醃料能軟化肉的組織,然後帶出香味 So I've got my garlic clove. Chile! You can't have a salsa without chile. 這個莎莎醬還少了什麼呢?辣椒!你們的莎莎醬絕不行沒有辣椒 So this is chipotles en adobo. Chipotles are the smoked, dried, jalapeno. 這種 chipotles an adobo (墨西哥的一種較溫和的辣椒), Chipotles 是煙燻並且曬乾的辣椒 If you can't get hold of any in the shops, just use a jalapeno.
