You can gauge how done your steaks are by comparing the elasticity of the steak to the way the meaty part of your thumb feels as it progressively flexes. Starting with your open hand, press your index finger into the fleshy part of your palm directly under the thumb. This is how raw feels. Forming your thumb and index finger into an "okay" symbol, press again into the same spot. This is what rare feels like. Rare is a steak with a very red, cool center. Connecting your thumb and middle finger, press again into the same spot. This is what medium rare feels like. Medium rare is a steak with a red, warm center. Connecting your thumb and ring finger, press again into the same spot. This is what medium feels like. Medium is a steak with a pink center. Connecting your thumb and pinky finger, press again into the same spot. This is what well done feels like. Well done is a steak uniform in color throughout, usually brownish-grey. If you are not quite ready to rely on the palm of your hand, you can safely rely on the internal temperature using a meat thermometer. 140 for rare, 150 for medium rare, 160 for medium and 170 for well. Allow your steak to come to room temperature before cooking and allow your steak to rest for at least 10 minutes after cooking before you cut into it to let the juices re-absorb. Steak on.
