  • Welcome to How To Cook That I'm Ann Reardon.

  • Today we are making Freak shakes which are like milkshakes that have gone crazy. Which

  • one would you like to have?

  • This idea comes from a cafe in Australia calledtissez they have people queuing for 40 minutes

  • to get one of these.

  • The first thing we need to do is make some ganache. Use a mixture of milk and dark chocolate

  • and pour over some hot cream.

  • I'll put all of the recipe quantities for these on the http;//howtocookthat.net website

  • for you, and there is a link in the description below.

  • Once that has rested for a few minutes give it a good stir until it is well combined and

  • looks glossy and yummy.

  • For each two milkshakes that you want to make measure out half a cup of this ganache and

  • put it to one side at room temperature. Pour the rest of the ganache into a plastic bag.

  • Flatten it out and put it in the freezer to chill so it thickens up.

  • If you put it in just in a bowl it will take a lot longer to chill.

  • All of the shakes have cream on top. So take some whipping cream and add a little vanilla

  • extract. Then use electric beaters to whip the cream. You'll need to turn the beaters

  • off to check if it is ready - this is nearly done but see how it's not quite holding its

  • shape it's still a bit droopy. Just give it a little bit longer... and then turn it off

  • and check again and that's how it should be. So you don't want to over whip it.

  • Place that into a piping bag fitted with a star shaped nozzle and just put that to one

  • side while we can make our shakes.

  • for the CHOCOLATE BROWNIE FREAK SHAKE

  • Place the half a cup of that ganache into a blender with milk and ice cream. and blend

  • that up well and you get a really rich chocolatey milkshake

  • Using the ganache that we put in the freezer so it is nice and thick spread a scoop onto

  • the inside of the jars. Then spread another scoop around the top of the glass, now be

  • really generous here because we want the to look crazy and over the top. To make it look

  • shiny heat the outside for a moment with a brulee torch. We don't want to burn it so

  • not too long just a quick pass over. Add a scoop of ice cream to each one and pour

  • in the chocolate milkshake. And you'll see that ice cream just float to the top which

  • is going to help when we are putting our cream on.

  • Pipe a circle of cream starting around the outside edge of the jar then around in a spiral

  • into the middle. Then pipe more on top because everything about these is generous and over

  • the top.

  • To each one add a square of chocolate brownie and a big marshmallow. Then use your brulee

  • torch to toast the marshmallow until it is brown and melted and crispy and it's ready

  • to serve.

  • For the NUTELLA PRETZEL milkshake in a blender put milk, half a cup of ganache, a big spoon

  • of nutella and of course a scoop of ice cream. and blend that all together.

  • Smear some nutella inside the jars and even more around the top. This one really is for

  • people who just like to eat nutella by the spoonful. Flatten it out a nit around the

  • top there and then add pretzels around the top of each one. Add a scoop of ice-cream

  • and pour in the nutella milkshake.

  • Pipe the cream around the top. Then add more nutella and pretzels to decorate. Yum

  • To make the CARAMEL APPLE PIE freak-shakes, these are my husband Dave's favourite. Take

  • a sheet of puff pastry and cut it into quarters.

  • Add some tinned apple to one side. Then fold the pastry in half over the top.

  • Use a fork to seal the edges and place onto a baking tray. If you're apple is unsweetened

  • sprinkle you may want to sprinkle a little sugar on top. and bake in the oven for 15

  • minutes.

  • In a blender pour in some milk, salted caramel and ice cream and whip that altogether.

  • Smear some caramel on the inside of the jar just like we did with the nutella and around

  • the top edge. If you want it dripping down heat it with a brulee torch and it will pour

  • down the sides there.. Add the ice-cream and salted caramel milkshake. Then pipe your cream

  • on top and put and apple pie on top of that and then drizzle with more caramel sauce.

  • Now for our DONUT FREAK SHAKES Place some jam around the outside of your jar and then

  • add some custard around as well. Put in a scoop of vanilla ice cream then pour in a

  • vanilla milkshake which is just made with your vanilla ice cream and milk.

  • Top that with cream. Then add your straw right into the center

  • and put the donut over the top placing it right in the middle so it doesn't slide off.
