Today, we are in the Asian food Mecca of America, Charlotte, North Carolina.

今天，我們來到了美國的亞洲食物朝聖地－北卡羅來納州的夏洛特。

Now, I'm just playing about our friend just moved here so you know we have to check out some Asian spots.

我現在在跟一位剛搬來這裡的朋友出來閒晃，所以你知道我們一定要去品嘗一些亞洲食物。

No lie. This has been my first time having Asian food in Charlotte ever.

真心不騙，這是我第一次在夏洛特吃亞洲食物。

I know you just moved in and you haven't really explored.

我知道你才剛搬來，所以還沒有好好地探索一番。

So we're about to check out this spot called "Taipei Express".

我們要去一間叫做「台北快餐」的餐廳。

Yo Jeremy, I know you're on the NBA diet, but you want a cheat day?

書豪，我知道你正在為了 NBA 球賽控制飲食，但偶爾來個放縱日怎麼樣？

Today is a cheat day, so I may explore a little bit. Maybe have some more carb than I normally have.

Wo Hoo! And you know because we're in Charlotte. We had to do "American Chinese food".

嗚呼！既然我們人在夏洛特，就得試試「美式中華料理」。

We got pagodas on the boxes, man!

Jeremy, you were saying growing up... you and your family how to name for this? [What did your parents call this food?]

書豪，你說你在成長過程中，你跟你的家人是怎麼稱呼這種料理的？[你的父母都怎麼形容這種食物？]

My mom and dad will call it fake Chinese food. They get really upset if I go like Panda Express or something like that.

我的父母都叫這種料理「偽中餐」。假如他們知道我去熊貓快餐 (Panda Express, 美國的中式快餐店) 之類的地方，便會感到不爽。

Hey, sometimes you gotta have some of that! Obviously we ate authentic food the majority of time.

嘿，有時候還是會想吃這種菜嘛！雖然很顯然我們在家平常都吃正宗的中華料理。

Have you ever thought about bringing your teammates to like a really authentic Chinese restaurant? [Would you take teammates for authentic Chinese food?]

你有曾想過要帶你的隊友到正宗的中華料理餐館用餐嗎？[你會帶隊友到正宗的中華料理餐館用餐嗎？]

I thought about it, but then I was like... Oh... I did that in college one time.

我有想過，但回想起以前在大學時曾經這麼做過一次...

It was like hit and miss.

有些人喜歡，有些人不喜歡。

You don't think that Kemba would like the stinky tofu, the chou-dou-fu.

你想，Kemba 一定不會喜歡臭豆腐。

I don't even like chou-dou-fu.

連我自己也不太喜歡臭豆腐。

Everybody go around the table and talk about what caught your eye immediately. [What dish caught your eye?]

來吧，看看這滿桌的料理，哪一道會立刻吸引你的目光？[你覺得哪道菜最吸睛？]

Alright alright, first of all... first of all... the chicken wing, authentic Chinese are not.

對我來說應該是炸雞翅，不過它並不是正宗的中華料理。

You gotta get a chicken wing.

你一定要嚐嚐看這個炸雞翅。

Yeah! You like it, don't you?

你也喜歡吧？

Not bad!

還不錯！

I'll say for me first, and I... what you have to get was the orange chicken.

對我來說的話，一定要吃的就是橙香雞丁了。

Yup, yup! You always have to get like either orange chicken, sesame chicken, sweet and sour chicken if you going for American Chinese food.

沒錯！來美式中華料理餐館你一定要點橙香雞丁、芝麻雞丁、或是糖醋雞丁三道菜之一！

I was always a lo-mein guy over fried rice guy.

比起炒飯，我一直都比較喜歡拌麵。

And I decided to go a little bit different.

但今天我決定嚐點不一樣的。

You know, obviously during seasons so I don't want just eat crazy, so I got some tofu, some eggplants, you know, some veggies, trying to even out.

你也知道，在賽季時我不會瘋狂地吃，所以我今天點了一些豆腐、茄子和一些蔬菜，來均衡一下。

Kind of a compromise. You're kind of rational.

做出了點妥協，你還蠻理性的嘛！

But if it's a summer time and I don't... and I'm like really trying get after it and not eat healthy, I don't know... if this will be on my plate.

但如果是在夏季休息，我想放縱地吃不健康食物的話，我就不知道這些東西會不會在我的盤子裡了。

I know you got a veggie plate, but that is a pretty greasy veggie plate.

雖然我知道你點這盤是蔬食料理，但真是一道油膩到不行的蔬食料理。

Of course, I got this house special fried rice. Originally I was just getting chicken fried rice... yeah the shrimps.

當然啦，我點了盤家常特製炒飯。原本我想點的其實是雞絲炒飯，但看到蝦子就讓我改變心意了。

Is Charlotte by the water? Cause these shrimps are huge.

夏洛特有靠海嗎？這些蝦子也太大了吧！

I feel like... Jeremy, a lot of people... like, a lot of Asian American still can't get over the fact. They're like this is not authentic Chinese food, and because a lot... it's been used to make fun of lot of us a lot.

書豪，我覺得很多亞裔美國人還是無法接受事實，總是在說這些不是道地的中華料理，而我們也常常因此而被嘲笑。

Oh yeah yeah! I know what Chinese food I eat. You know bla bla bla...

噢對！對！我知道這道中華料理是什麼！之類之類的。

You get the fortune cookie at the end bla bla bla...

吃完最後還會拿到一塊幸運餅乾...

As young asian american, we got teased about it so much.

身為年輕的亞裔美國人，我們常常被用這個話題開玩笑。

So we kind of push back on this food, but if you can just release yourself from that and just eat it. It's pretty good!

所以我們有點抗拒這樣的偽中餐，但假如你單純放輕鬆地吃，這些料理其實嚐起來都蠻美味的！

I've told my parents like... sometimes I just prefer this.

我有跟我父母說過，我其實有的時候比較喜歡這種料理

It's a different taste...you know... like authentic... Obviously if I have to choose one for rest of my life everyday, I'll choose authentic.

但這跟道地的中華料理相比，味道不太一樣。當然如果我的餘生只能選一種的話，我還是會選正宗的中華料理。

But every once in a while, it's okay to have this. Like you say, it's actually really good if you wasn't like... you know labeled as "fake Chinese food". It would still be really good.

但偶爾吃吃這樣的菜也是沒什麼不好的。如你所說，假如不要把它們貼上「偽中餐」的標籤，這些菜其實真的滿好吃的，

You know what it is, man.

你懂的，老兄！

People are getting attached to the meaning of it... rather than the taste.

人們太過於在意食物背後的意義，而不是實際的味道。

Yeah, that's a great way to put it.

你說得一點都沒錯！

I probably think some of our parents who like... grew up in Asia and then move over here.

我在想啊，我們那些在亞洲長大然後搬來美國的家長們

They probably look at us sometimes, and they see us as these.

有時會不會覺得我們看起來就像這些偽中國菜餚一樣？

Andrew has some Chinese characteristics but his Chinese is not that good so he's like panda express.

Andrew 有些中國人的特質，但他的中文不是很好，所以他就像是「熊貓快餐」(Panda Express)。

And because my Chinese is a little bit better, maybe I'll be like P.F. Chang's.

而我因為我中文比較好，所以我比較像是「P.F. Chang's」(一家美國的亞洲與中華料理連鎖餐廳) 這種比較高級的餐廳。

That's a thing, my teammates are always like, P.F. Chang's. Let's go to P.F. Chang's Chinese food.

這讓我想到，我的隊友總會向這樣：P.F. Chang's。我們去 P.F. Chang's 吃中華料理吧！

But I'm like P.F. Chang is good! Don't get me wrong, but I might not take my parents to P.F. Chang's. That would be offensive to them.

不要誤會，我其實覺得 P.F. Chang's 是還不錯，但我應該還是不會帶我的父母到 P.F. Chang's，不然大概會惹怒他們。

Okay ,so, right now we're just gonna explain some of the dishes.

好，現在我們要開始解釋我們都點了些什麼菜。

This is the sautéed green beans. This is called 四季豆.

這道是乾煸四季豆。這種豆子叫四季豆。

I like how they... they've been stirred fried to the point where they're kind of dry.

我喜歡這些豆子乾炒後有點乾乾的口感。

That's when you know they're good. Sometimes you get the joints, they are too ,like, fresh and like, water sauce.

看乾乾的四季豆就知道這盤肯定好吃。有時在外面會吃到豆節明顯太新鮮，或者說太青翠的。

You gotta get the wok hot.

在炒的時候鍋子的溫度必須再熱一點。

This is orange chicken, the... I don't even know if there's a word for this orange chicken.

這道叫作橙香雞丁，我甚至不知道這道料理的中文要怎麼說。

Cause I... 橙雞... but they don't even have them, I don't think it's a real dish.

橙雞... 但好像沒人這樣說，我想這不是到正宗的中華料理。

Look at this though! The orange peel! Right in here!

可是看看這個醬汁，還有這個真材實料的橘子皮！就在這裡！

I don't know how often I see that.

我幾乎沒看到這麼真材實料的。

Must I say... the Taipei Express is delivering on the American Chinese food. This is A class. [Top notch American Chinese food]

我必須要說，這間「台北快餐」提供的美式中華料理可說是頂級水準。[頂級美式中華料理]

No lie! I'm not just saying that for the camera! It is!

童叟無欺！我可不是因為正在錄影才這樣說！是真的很棒！

These are the eggplants in garlic sauce.

這道是蒜香茄子。

They actually did it pretty authentic in terms of a lot of places still have like a bottom layer drenched in the sauce, and then the upper layer won't be as much.

他們把這道菜煮得相當道地！你可以看到底層的茄子浸泡在濃濃的醬汁裡，但是上層的茄子的醬汁比較少。

So depends on what you're looking for. You want more flavor, a little more unhealthy, you go to the bottom.

所以看你喜歡什麼樣的味道。如果喜歡重口味、較不健康一點，你可以把茄子沾底部的醬汁一起吃。

You want to keep it clean, stay on the top.

如果你喜歡吃比較原味的茄子，就不要沾下面的醬。

One thing that I love about eggplants is gotta be pretty soft which these are, so this is a good dish!

我喜歡煮得非常軟的茄子，而這盤煮得非常的軟爛，因此深得我心！

I got the tofu. Black bean sauce.

我點了豆腐佐豆豉醬。

This is the in-season special, right? Yeah!

這是當季限定菜餚對吧？沒錯！

It's not deep fried. It's stirred fried tofu and one thing about it is, it should be like break really easily.

這道豆腐不是油炸而是拌炒的，所以豆腐應該要很容易碎掉才對。

You're doing the break test right here.

你正在做碎豆腐測試。

So yeah, I mean, it could be a little softer.

所以沒錯，我覺得它再軟一點會更好。

Yo, that black bean sauce is strong... it's strong.

豆豉味道很重，真的很種。

it's good though. I like it!

這樣才好啊，我喜歡！

I want to talk real quickly about these sa cha shrimps.

我想要快速地評論一下這些沙茶蝦。

Have you guys had it yet? Tell the people really quickly about sa cha as a sauce.

你們吃了嗎？間短地跟觀眾們說明一下沙茶醬是什麼。

You know, sometimes it's a good sauce for like hot pot or something like that.

你知道，在吃火鍋之類的食物時，沙茶醬是很棒的醬料。

But that was really good. I like that!

這道菜真的很棒。我喜歡！

Maybe it was partly our fault, but this is a little too much broccoli in there! I mean a little more shrimps in there.

雖然我們或許也得負部分責任，但這也太多花椰菜了吧！我還期待有更多蝦子呢。

I've never had sa cha broccoli before in my life.

我這輩子還沒吃過沙茶花椰菜耶。

I am at an American Chinese spot in Charlotte, North Carolina and I'm eating Chinese food I've never had before.

我竟然能在北卡羅萊納夏洛特的一間美式中華料理餐廳裡吃到我從沒吃過的中華料理！

So this is the mu gu gai pan. The water chestnut, the peas, and that sliced carrots are the staple of American Chinese food. Um, oh my god.

這個是蘑菇雞片。荸薺、青豆、紅蘿蔔片，全都是美式中華料理中常出現的固定班底！噢，我的天啊。

What you will see in American Chinese food too... (You'll) see a lot of these baby corns.

還有一種在美式中華料理中常見的蔬菜就是... 你會看到一堆這種玉米筍。

Shout out to baby corn, man.

玉米筍太讚了，兄弟。

Baby corn is more authentic than baby carrots.

玉米筍比小紅蘿蔔還要正宗得多。

Cause baby carrots are just shaved down into that shape.

因為小紅蘿蔔只是被削成那個形狀而已。

My whole perspective on carrots has been blown. This is ridiculous.

我對紅蘿蔔既有的舊觀念已經瓦解了。太誇張了吧。

The worst is when the orange chicken and the sesame chicken tastes the same.

最糟的狀況就是，當橙汁雞丁和芝麻雞丁吃起來味道是一樣的時候。

That's when... that's when... that's when it's all bad.

這就代表最糟的狀況發生了。

When it comes to fried rice, I'm not gonna lie.

每當提到炒飯，我得發自內心的坦言。

Any rice with chopsticks is like, so frustrating.

用筷子吃任何種米飯都非常令人挫折。

Cause like this fried rice, it doesn't clump together. Yeah! It's all loose.

因為，例如像這道炒飯，米飯都沒有聚集在一起。沒錯，他們相當鬆散。

It's like hard to guard like you're trying to contain them.

想去夾住這些米飯，就跟籃球中的後衛一樣困難。

Alright, what was everybody's favorite thing? [What is your favorite dish?]

For me, I actually gotta say it was the chicken wings. [David's draft pick: chicken wings]

That's... That's up, I had three of them. [Lin with dinner high of 3 wings.]

I don't know, it's hard to mess that up. It was really good. [black-bean saint]

不知道怎麼說，要煮得難吃還比較難。真的很好吃。[豆豉聖人]

Oh! We cannot speak too soon!

噢！我們太早下結論了！

They said that these are handmade, in-house dumplings, alright.

他們說這是手工製作的家常水餃。

So what this... they just came out. You could see the steam coming out.

所以這道菜呢，他們才剛出爐，你可以看到上面還熱騰騰地冒著煙。

So what I'll do is, I'll just bite a corner off and let the air out.

所以我要做的就是：在上面咬一個小角，讓空氣跑出來。

Authentic what's gonna happened, you have all this juice inside so you have to make sure you bite the top and let it sit like that. If you lean it, all the juice is coming running out.

這才是道地的吃法，你要把湯汁保留在裡面，所以你得確保只咬了一個小角，然後慢慢的喝掉裡面的湯汁。如果你把不小心傾斜了它，湯汁就會全都跑出來。

Yup, we got the fried ones, too. There.

沒錯，我們還點了炸水餃(鍋貼)！在這！

She balanced that right on top.

他直接把餐盤疊到上面去了！

That's authentic right there!

這就是道地的中華料理疊法！

My takeaway from this: American Chinese food as a genre is progressing as the years go by.

我今天的感想是：這類的美式中華料理正隨著時間而不斷推陳出新。

It's not just staying stagnant. Progress! !t's like the game of basketball.

它並不是完全靜止不動。它會成長！就像是一場籃球賽一樣！

Stretch Fours.

This food, is does kind of represent a lot of them.

這些食物某方面來說也能代表延伸四號。

And it's also interesting that you guys talked about the evolution of this.

'Cause it is like, just as a whole society becoming more health-conscious.

也跟上了現代社會越來越注重飲食健康的風潮。

Like, you see a lot of like, juice bars and things like that popping up.

And now I see this is like the healthiest American Chinese food I've ever had.
