Does nearly six billion dollars annually 雇用了65000位員工,每年賺進約六千萬圓 and sells over four hundred kinds of seafood. Located right in central Tokyo 販售超過400多種不同種類的海鮮,魚市場位於東京中心 between GINZA and the SUMIDA RIVER. The attraction is just the massive scale 最大的特點是 of this place and the, like the chaotic energy. 大規模的場地和熱情的氛圍 It's crazy! 好瘋狂喔! These Cars racing paths..We're in serious danger right now! 有如這些車子的賽車跑道... 我們現在身處危險之中! So we've been here 6 or 7 hours coming here at 3am, and it's now almost 10am! 3點開始營業後,我們待了6、7個小時,現在已經快要10點了 Mr.MORITA was kind enough to show us the option in guide us around the market today MORITA 先生 要帶我們到市場裡四處逛逛 Take a look 看一下吧 visitors can come and see the tuna auction at 5am 遊客可以於凌晨5點到這裡來觀賞鮪魚拍賣 it's limited to 100 people on a first-come first-served basis 但上限人數為100人,先到先贏 Get there early! I'm talking like 3:45a.m. 所以要早一點到!我是說3:45就應該要到 There are 2 groups of sixty 分成兩組,各60人 with a sixty to ninety minute wait 要等個60至90分鐘 Is it gonna be worth it? 這值得嗎? I'm getting a little bit tired.. 我已經開始感到有點累了... Actually you know being together here with everybody 其實和大家一起在這裡等待的感覺 It's not that bad. Its actually worth waiting throughout the night 非常非常興奮,徹夜等待真的很值得 They can dig in on the ends 他們會在尾巴部分挖洞檢查 Take a piece of MAGURO and feel for the freshness 取下一塊鮪魚肉來測試新鮮度 fat content and distribution. 脂肪含量和脂肪分布 A flashlight can make it easier to see the quality 使用手電筒可以讓品質檢查工作更容易些 Not all tuna are the same 每一隻鮪魚都是獨一無二的 Buyers usually have a list of the tuna they want 買家通常會有自己的購物清單 and know the value before they bid. 他們再下標前就已經知道鮪魚的價值了 The bell starts the auction 鈴聲響起代表拍賣開始 There are several auctions taking place at the same time 在同ㄧ時間,會有許多拍賣會同時進行 The first tuna sold within 10 seconds 第一隻鮪魚10秒內便售出 The buyers use number gestures quickly 買家會用手勢出價 Often not even saying a word 通常是不會用嘴巴喊價的 Morita san took us to a shop selling TUNA that he knows in the outer market Morita 先生帶我們到一間販售鮪魚的商店, This is a tuna purchased at the auction this morning 這隻鮪魚是早上在拍賣會上購買的 it's big enough to feed an army 大到可以餵飽整支軍隊了 You can see it's so white it's loaded with a lot of the fat, the oil 看這白色部分的厚度就可以知道這隻魚充滿了許多脂肪和油脂 you can see the cuts of MAGURO(tuna) here 這邊則是切片的鮪魚 AKAMI is the typical lean and red tuna meat 前背部是典型且帶有鮮紅色的鮪魚瘦肉 found near the fin 也就是靠近魚鰭部分的肉 CHUTORO is from the middle belly 厚腹部的肉則是來自於鮪魚的腹部下方 Pinker with fat 佈滿油脂 OTORO is from the lower belly, loaded with fat 前腹部的肉則是來自鮪魚的下腹部,一樣佈滿脂肪 and melts in your mouth when eaten. 入口即化 Lighter color means more fat 顏色較淺代表脂肪含量較高 more flavor and more expensive. 口感、味道佳但也較昂貴 Nine is a hook symbol! Unusual! 九代表鉤子之意,很特別吧 You can't use your other hand 其他手指則不代表任何意思 You can tell the zeros by the item 從魚的部位就可以知道後面有幾位數 Cheap ones are thousands 便宜的為千位數 in the auction the buyers gesture fast 在拍賣會中,買家的手勢非常快速 this is universally understood in TSUKIJI 在築地市場裡,大家都懂這些手勢 Japanese knives are some of the best in the world 日本的刀子在全世界可以算是數一數二的好 This one is a knife used to cut MAGURO for more precise cuts 這支刀子是用來將鮪魚切片的 it may look like a sword,but its a knife 看起來像把劍,但它是支刀子 it's about 70 centimeters long 大約70公分長 and used for opening the tuna 用來切開鮪魚的 These are sold in shops all over the outer market 在外部市場的商店都買得到 It's well made and weighs about one kilogram 做工精細,重量約一公斤重 Feels like a machete but longer 像支彎道但還要長一些 and crafted to cut through bone 它的設計讓師傅能輕易地切斷魚骨頭 When holding long knives 手拿著刀時 don't get over excited and watch where your point the end! 千萬別太興奮,要注意刀尖部分 sorry about that shirt, Greg 很抱歉割破你的衣服 Greg Morita san also got some sea urchin and scallops to go along with the Morita 先生在商店裡買了一些海膽、扇貝 5000 yen worth of MAGURO from the shop 和價值5000圓的鮪魚 All you need is a bowl 現在我們需要來個碗 some plain rice a little WASABI...or a LOT 白飯和一點點芥末...應該說很多芥末 and some soy sauce! 還有一點醬油 this is called the KAISEN-DON 這就叫做海鮮蓋飯 and its good 非常美味 I think this is the best KAISEN-DON I've ever tasted 這是我嚐過最美味的海鮮蓋飯 Do it yourself TSUKIJI breakfast is definitely the best way to go 早餐來點道地的築地海鮮蓋飯是最棒的選擇 If you prefer a faster breakfast 當然如果你想要節省時間 head to the outer market which is loaded with good food 可以直接到外部市場購買,那裡賣有多樣美食 let's try this KAISEN-DON tent 來試試這間帳篷式的海鮮蓋飯吧 the special bowl with the little of everything goes for 2300 yen 這碗豐富餡料的蓋飯要價約2300圓 Looks good, but how does it taste? 看起來很好吃,但吃起來怎麼樣呢? so good 太美味了 A breakfast fit for aquaman 適合海王子吃的早餐 TSUKIJI's inner fish market is really interesting to wander around in 築地魚市場真的是個可以好好探索體驗的好地方 this is a real working wholesale market and doing business is their first priority 一個實戰的批發市場,在這裏交易是第一順位 But in the late morning after 9 a.m. vendors are much happier to allow photos 早上約9點過後,攤商會比較樂於拍照 In here you can see everything 在這裏可以看到所有的鮪魚製造販賣過程 from flash frozen MAGURO being sliced by an electric saw 從看工作人員使用電鋸將鮪魚切片 to fish being turned into seafood 到將鮪魚烹煮成海鮮料理,應有盡有 It's real!
