You'll find macaroni salad at many American cookouts, especially in the south. Veganizing

this salad is super easy thanks to Vegenaise. This is another one of those "they won't even
-
know it's vegan" dishes. Start by boiling 2 cups of macaroni. While
-
it's boiling, finely dice 1 cup of celery and 1 yellow, red or orange bell pepper. Drain
-
and rinse the macaroni so it will stop cooking. Add it to the vegetables.
-
Then, make your dressing. We're using 1 cup of Vegenaise, 2 tablespoons of sweet pickle
-
relish, 1 ½ tablespoons of apple cider vinegar, 1 tablespoon of yellow mustard, ½ teaspoon
-
of salt and ½ teaspoon of black pepper. Mix it all together.

And then add it to the macaroni and the vegetables. Mix it well. You're gonna want to sit this
-
in the refrigerator overnight so the flavors can really come together.
