The Northeast is very special, and it's sort of the opposite to what I expected. I discovered that the food is completely different to any of the Indian classics of Cook before. Yeah, there's no Gamma Sala. You know there's no there's no there's no powders. It's all fresh, fragrant, very little spice now flown back to Calcutta, where I'm about to put my neck on the line. Northeastern Curry's have never been sold on the streets before. I'm going to use everything I've learned to create dishes that will show this city. I thought my first week in India was eye opener. This one was a shocker thing because it's hard to believe that exists. It is almost like you weren't in India. Culture is equally as exciting as the food. Just amazing. I know the simplicity, concentration of great ingredients and not pissing around with it. India's help me t become Yeah, not just you. A proper chef. I've never was never out that bracket, but it helped me to confirm what I love doing more than anything. Can we talk that?
