  • one week ago, I set off an adventure into the wilds of the northeast of India to track down the fabulous dishes that are unique to this region.

  • The Northeast is very special, and it's sort of the opposite to what I expected.

  • I discovered that the food is completely different to any of the Indian classics of Cook before.

  • Yeah, there's no Gamma Sala.

  • You know there's no there's no there's no powders.

  • It's all fresh, fragrant, very little spice now flown back to Calcutta, where I'm about to put my neck on the line.

  • Northeastern Curry's have never been sold on the streets before.

  • I'm going to use everything I've learned to create dishes that will show this city.

  • What has been missing is the crack of dawn on our pearly to join the other street cooks already preparing for a busy lunch D day.

  • Now the street start to get busy.

  • Everyone's starting to sort of get themselves organized on Zarina smell already so that he is on with the other 135,000 stalls.

  • My competition is going to be tough.

  • My Northeast Curry's need to be good enough to tempt customers away from their tried and tested favorites.

  • They would have seen or discovered food like this before.

  • So I just hope in the hell that they don't turn their nose up against because they don't recognize.

  • Well, that's not sort of what we used to on.

  • I've hired some local lads to help me out.

  • How are you?

  • Good to see exits on.

  • This is tough on you.

  • Are you sure they're not bunking off school?

  • No, no, no.

  • Definitely not.

  • I didn't I don't.

  • Okay, Rush.

  • Okay.

  • First thing I need the fire lighting.

  • I'm going to draw on the unique flavors of the Northeast to create three delicious Curries.

  • My first chicken and green vampire inspired by the winning restaurant at the cooking competition.

  • It will have that classic Tommy sour tang that the locals won't be used to cream pie helps it not just soft chicken.

  • Marinated also gives that really nice tart flavor.

  • I'm going to make a fish curry using the dried bamboo shoot from Nagaland.

  • It's something of an acquired taste.

  • I don't know how we'll go down here.

  • This combination of a sort of bailiff strug lemongrass with a little hint of licorice First time for you.

  • I'm so pleased.

  • My final dish is the Northeast and take on vegetable curry.

  • Instead of using dried spices, I'm using fresh ones, making it more subtle.

  • Flavor fish with a puree of sesame seeds for more sticking vegetable curry with a sesame seed paste.

  • And then, after that fresh coriander paste.

  • Just one last thing to do.

  • Before I open my store, I'm sweating like a pig.

  • I looked like a pig.

  • I stink like a pig, right?

  • Get changed.

  • Nothing.

  • You see value in the bike into a little bit about you.

  • Develop a lot of Taliban here, cooler, much better.

  • So it's not exactly Chef Weiss's it, but I suppose it's is equivalent a local chef wife tell you what's a lot cooler.

  • Nothing wrong with Commander in the midday sun.

  • Time to save my take on the Northeast.

  • Curries can win over Calcutta's food is that is from the Northeast.

  • You must tell them that.

  • Tell me how.

  • Wait, Chicken One.

  • Thank you for coming, Mr.

  • Actually is the new thing for us, and I don't know what the people would like it or not, but in my opinion, it's really a superb once.

  • Let's go, Let's go, Let's go!

  • The food is very good.

  • Uh, that I had to face with bamboo shoots.

  • It's very testing jokes.

  • Green papaya.

  • Thank you.

  • Chicken pies going down a storm.

  • Extraordinary.

  • It was really good.

  • No way.

  • Very doubles.

  • And he's really good.

  • Last chicken last night.

  • It's unbelievable.

  • That's barely 50 minutes over 140 chickens going, which is testing you with the last.

  • The chicken coop are gone.

  • My fish and vegetable Curries quickly set out to thank you.

  • That is now officially Gordon Ramsay's Calcutta Cafe clothes.

  • It's been a great day.

  • That my son, is a good morning's work.

  • Okay?

  • Not only that you have actually succeeded in doing something many people would have said is impossible.

  • Very well.

  • Very well.

  • I look ridiculous on you.

  • Must have lost half my body weight in sweat.

  • But I've proved that Curry's on the north east of India are worth shouting about.

  • I thought my first week in India was eye opener.

  • This one was a shocker thing because it's hard to believe that exists.

  • It is almost like you weren't in India.

  • Culture is equally as exciting as the food.

  • Just amazing.

  • I know the simplicity, concentration of great ingredients and not pissing around with it.

  • India's help me t become Yeah, not just you.

  • A proper chef.

  • I've never was never out that bracket, but it helped me to confirm what I love doing more than anything.
