(everybody laughs) (大家開心笑著) - Lot of people ask me, 很多人都問我 "What kind of rice you are using?" "妳都用什麼種類的米呢?" So, I'm going to show you Korean short grain rice. 所以 我要向大家介紹韓國短米 I always eat short grain rice. Let's go. 我都是吃短米的 走吧! Really sweet and crispy. 這叫做"chamoe" 吃起來甜又脆 How can you eat? 要怎麼吃呢? Just peel it off and eat. 只要把皮削掉 Inside scoop out just like honeydew. 刮除裡面的籽就可吃了 像極了哈密瓜 Crispier and also firmer than honeydew. 比哈密瓜結實又脆 Perilla leaves, even now, stems are long. 韓國紫蘇葉 莖很長了 But sometimes they package it to sell. 超市會摘取葉子包裝後販賣 But sometimes sell this way. 但大部份都是這樣販賣的 This perilla leaves are very herby and minty. 這些韓國紫蘇葉非常漂亮又香 I usually stir-fry this. Saute. 我通常用它來炒或燉煮 What I'm doing is this part is very tough, 這根莖非常的硬 so I don't eat it. 我不吃它 So, I just cut this way. Some tender part. 我會把嫩葉的部分摘下 And then stir-fry with onion, garlic, and soy sauce. 然後和洋蔥 蒜加點醬油一起拌炒 And really nice. 非常好吃 King oyster mushrooms. 杏鮑菇 Slice it this way. 順向切片 You can make bulgogi with this. 你可以用杏鮑菇切片來取代牛肉 Instead of beef, use this, sliced 煮韓國烤肉 and tastes really tasty. 美味極了 So I gotta mention this kongnamul. Soybean sprouts. 再來一定要提到黃豆芽 Each stem, pretty and white. 每一根白又漂亮 that's the kind of good kongnamul. 這才是好的黃豆芽菜 You can make bean sprout soup. Soup is so delicious. 你可以煮黃豆芽湯 湯頭會非常讚 And also, you know, steam this and mix with seasoning sauce. 你還可以把黃豆芽蒸過後拌入調味料 And then really, really tasty. 真的是非常非常美味 - What is the difference between mung bean and soybean? 綠豆和黃豆有什麼不同呢? I know you've explained this before 我知道妳之前解釋過了 but I just can't remember. 但我就是記不住 - Mung beans are small and green, 綠豆是小顆的 and much smaller than soybeans. 比黃豆小很多 Mung bean sprouts is right here. I saw that. 綠豆芽在這裡 我看到了 These are mung bean sprouts. 這些是綠豆芽 So, sprouts but they're kind of head part smaller. 都是豆芽 它們頭的部分長的類似 Because beans are small. 因為綠豆都是小顆的 Mung bean sprouts I use in my bindaetteok. 我曾用綠豆芽製作過綠豆煎餅 Mung bean pancake, we need this. 煎綠豆煎餅時 我們就需要買這個 This is Korean dae-pa. 這是韓國大蔥 Large size green onions. 大型綠蔥 Stems are really thick and long. 它的莖非常粗又長 And really sweet. 吃起來非常的清甜 When I make pancake or Korean spicy fish soup, 當我製作煎餅或韓國辣魚湯時 I just add this and really nice. 我只會加大蔥 非常好吃 So, Korean chili pepper. 再來是韓國辣椒 green chili pepper. 青辣椒 These days these guys are not very spicy, 這季節的青辣椒不會很辣 so I use the long green hot pepper. 所以我會使用長的青辣椒 You can get this at any grocery store these days. 這陣子你可以買這種辣椒 But this is very spicy, 但這種非常的辣 that's why that's my favorite. 這是我的最愛 That's why this is in Korean grocery store (laughs). 所以它才會在韓國超市(笑) This is water dropwort. 這是水芹 This is called minari. 韓語叫做"minari" Oh, this very tender these days. 噢!這季節的水芹非常的軟嫩 We put this in the kimchi. 把它跟白菜放一起來製作泡菜 And sometimes I blanch this and then mix 有時我會把水芹川燙後 with the seasoning sauce and sweet and sour spicy, 放入甜酸和辣調味料 I make this. 來製作這道菜 So, water dropwort. 這是水芹 Minari. (韓語)Minari Korean red pepper. 韓國紅辣椒 So, you see. Fresh red pepper. 你們看 新鮮紅辣椒 and I just use this for garnish. 我常用它來盛裝盤飾 They're beautiful color. 它們有著漂亮的顏色 I can keep in the refrigerator 我會放入冷藏保存 like up to two weeks, 可保存二週 but sometimes I just let them dry. 有時我會故意放乾掉 So, I have like a Korean dried chili pepper even at home. 這樣我在家就有韓國乾辣椒可以使用 (water flowing) (流水聲) Taro root. Toran. 芋頭 Tastes like a potato. This guy is very thinner and shorter. 它們非常細且短 My recipe, you guys can use any type of chives. 我的食譜裡 你們可以用任何種類的韭菜 Even this. I usually use this chives. 我也是用中國韭菜 Because Korean chives are kind of seasonal. 因為韓國韭菜是有季節性的 Not easy to find them. 不容易找得到它們 So, you can use this chives. 你可以使用中國韭菜 Very fresh. I love that. 非常新鮮 我愛用它 This eggplant is thinner than usual, regular eggplant. 這茄子比一般來的細 正常大小 The skin is thin. 皮很薄 And just steam five minutes, 只需蒸五分鐘 and then you blanche this. 蒸軟後撕開它 After that, just seasoning. 再來調味 Season with Korean spice. 用韓國醬料調味 And very sweet and tender when you do this, 非常清甜和軟嫩 like melting in your mouth. 吃起來入口即化 That's my favorite. 這是我的最愛 I use a lot of garlic when I make this. 我煮這茄子時會加很多的蒜頭 This is Korean pear. 這是韓國梨 You guys know that, eh? 你們都知道吧? Years ago not many people knew about Korean pear. 以前很多人都還不知道韓國梨 And then I used to give this present to my Canadian friend. 當我拿給我加拿人朋友時 My Canadian friends, when they taste this, 當我朋友吃了這韓國梨 "Oh my! This is pear?" "噢!天啊 這是梨子嗎?" "How come so delicious?" "怎麼會這麼好吃啊?" They are so shocked. 他們都非常驚訝 But these days everybody knows 但這幾年大家都知道 about my secret, you know. 我的袐密 你知道的 So, you guys can buy this anywhere. 所以 你們可以在任何超市購買 They call this the Asian pear, but smaller. 美國人叫它做亞洲梨 比較小顆 Korean grocery store they sell really nice. 韓國超市賣的比較好 They came from Korea directly. 它們是從韓國直送美國的韓國超市 Next, very important ingredient to make kimchi. 再來是製作白菜泡菜非常重要的食材 What do we need? 我們需要什麼呢? Yeah, cabbage. Korean cabbage. 耶 白菜 韓國白菜 Napa cabbage. Let's go. 大白菜 走吧 When you choose a Korean radish, 當你在選韓國白蘿蔔時 and it should be smooth. 它需摸起來滑順 Everybody likes smooth. Smooth. (laughs) 大家都喜歡滑順(笑) These days not peak season, 現在不是白蘿蔔的季節 but I always buy Korean radish 但我都買韓國白蘿蔔 and then I keep in the refrigerator. 然後放在冰箱 How can you keep in the refrigerator? 我要如何把它放在冰箱呢? Don't put it in the refrigerator by itself like this, 不要直接把整根蘿蔔放進冰箱 because this guy is going to freeze easily 因為它們容易結冰 even in the refrigerator temperature. 即使是冷藏室 Wrap it with paper towel, kitchen towel, 用廚房紙巾整根包裏起來後 and then put it in the plastic bag 再用塑膠袋包起來 so that it's not going to dry out. 這樣表皮才不會乾掉 And then keep in the refrigerator. 然後放入冰箱 Then you can store this, like, 可放冰箱保存 for one month in the refrigerator. 大約一個月左右 So, I use, like, 我通常都會這麼做 sometimes I make soup or stock. 有時我煮湯或是高湯時 Delicious anchovy stock. 像是美味的鯷魚高湯 Always I need this guy. 一定要使用白蘿蔔 What I'm doing is that I cut it. Cut. 我怎麼做呢? 我先切它 And then I use this amount. There's leftover. 我用這一塊 其餘的 I wrap with kitchen towel and then plastic bag 我用廚房紙巾和塑膠袋包裏起來 and then refrigerator. 然後放進冰箱 See you later. (laughs) Like this. 再見(笑) 像這樣 So you make the cubed radish kimchi. 你可以做蘿蔔塊泡菜 Everybody loves cubed radish kimchi. 大家都愛蘿蔔塊泡菜 Kkakdugi. It's called kkakdugi. Kkakdugi 這叫做kkakdugi You can make this kimchi. 你可做這種泡菜 It's main ingredient. 白蘿蔔主要材料 And this cabbage. Napa cabbage. 和白菜 大白菜 I'm always excited, especially whenever 我總是非常興奮 特別是人在國外 I travel foreign country, if I see Korean Napa cabbage 出國旅行時 當我在農人市集看見 on their farmer's market, my heart is beating. 韓國大白菜時 我會心跳加速 "Oh my God! My relative is here." "噢 我的天哪 我的親戚在這裡" You know something like feeling. 就像這種感覺 When you choose this, lot of green stuff. 當你在挑選時 綠色的部分多 There is not much blemish. 沒有太多瑕疪 And also, instead of really thick leaves 還有葉子不要太厚 菜梗不要太粗 and stem, I use thin. 我都挑細梗的 Thin leaves are better taste, 薄葉比較好吃 because if these are too thick, 如果葉子太厚 after making kimchi, water comes out too much. 泡菜會出太多水 Too much of kimchi brine. 這樣會有太多的泡菜汁 Peak season is before winter starts. 冬天來臨前是白菜的產季 That's really delicious. 非常美味 Everything. Radish and cabbage really delicious. 白蘿蔔和白菜都真的很美味 But what else can I do? 我還能做什麼呢? I have to keep making kimchi. 我要一直做白菜泡菜 Even though some blemish. 即使有些瑕疪 Okay, I have to make kimchi, you know. 還是要做泡菜 Because I run out of kimchi. 因為泡菜吃完了 I cannot live without kimchi (laughs). 我不能沒有泡菜啊(笑) Okay.
