Hey everyone, it's Natasha of Natashaskitchen.com. Today we're making our
favorite shrimp lettuce wraps. This is a quick and healthy dinner and do not skip
that peanut dipping sauce. You'll be surprised how easy it is to whip up and
it's better than any restaurant sauce we've tried. We'll start with the shrimp.
I have one pound of large shrimp here that I've patted dry with the paper
towel. Seasoned lightly with salt and pepper and stir to combine. Place a large
pan over medium-high heat and add a tablespoon of oil. Once the oil is hot,
add the shrimp in a single layer and saute about two minutes per side or just
until it's cooked through.
Transfer those to a plate and let them cool to room temperature while you prep
the rest of your ingredients. Peel and julienne one medium carrot or slice it
into thin matchsticks.
Now do the same thing with your cucumbers. If you're using mini cucumbers
or English cucumbers, there's no need to peel the skin.
Also pit, peel and slice one medium of avocado into thin strips.
You'll need 1/2 of a small bunch of cilantro and we just cut it in the
middle because I think big pieces of cilantro are fun in lettuce wraps. But
you can chop it coarsely if you prefer. To wrap these up, you'll need one head of
lettuce and this kind of lettuce goes by many names. You'll see it called Boston,
bib, or butter lettuce and if you have trouble finding this, you can also use
hearts of romaine leaves. Cut out and remove the tough center, then pull apart
the leaves into individual cups. Transfer everything to a serving platter and last
but not least, the two ingredient peanut dipping sauce. We use half a cup of
low-fat sesame ginger dressing and about one and a half to two tablespoons of
creamy peanut butter. Add those together to a mason jar or to a Tupperware
container with a tight-fitting lid and shake shake shake until it's creamy
smooth and well combined.
All right, everything's ready and all that's left is to assemble these and
then it's party time. And when you serve these, just be prepared with a whole wad
of paper towels because... oh you're not gonna want to stop with the sauce. Oh my
goodness! Okay, here we go. Let's make some cuz I am getting hungry. Okay, so we start
with the lettuce and then these are perfect for parties, because everybody
can make their own and put whatever they like on there. So we're gonna add some
carrots and a little bit of all of our veggies that we've prepped. Some fresh
cucumber and avocado. I will get our hands dirty because we can. YUM! And I
love lots of avocado in here. Okay, there we go
and shrimp of course. Put a few on each one. My mouth is watering right now
because I know how good these are. And that sauce... I am telling you, it's amazing.
It's so easy and seriously good. And then last but not least, a little bit of
cilantro. It adds a nice fresh pop of flavor.
Okay, and then the sauce. I'm just gonna pour it on. That's my favorite part. Okay,
here we go. Oh my goodness! Yum, yum! Okay and then the trick is
getting them into your mouth as fast as possible. So here we go, kind of fold them
into like a little lettuce burrito If you will. Okay, here we go. I can't wait
any longer. These hit the spot every single time and that peanut and ginger
sauce gives it this unique authentic flavor. It's better than any restaurant
sauce I've ever tried hands down and it couldn't be easier. And then all the
fresh ingredients in here. This is the best for parties and my husband and I
can finish the entire batch between the two of us, no kidding.
