Okay, so right now I am heading to Chelsea Market
The one we went in a previous FLOG just to get some
utensiles and kitchen stuff
But this time it's for a different purpose
Cause I'm goint to the YouTube Space New York
I hope It's gonna be nice
So the YouTube space New York is located right in the center of Chelsea Market
How cool is that
So as you would expect, the YouTube Space in New York is great
Really big, but also the people are so nice, they are not so grumpy
It's just not true about New Yorkers
I mean I come from Paris, so I can't tell exactly
Don't get me wrong, being a YouTuber
is a dreamjob, but it can be challenging sometimes
and also it's great for me just to meet some coworkers
Now I need to hustle, cause I need to go to Brooklyn
and it's about an hour away, and I think I'm already late
So I'm in Brooklyn Heights
finishing my morning's bagel
The problem with bagels is the seeds
You can't have a proper meeting after a few bagels
Everything bagel in your teeth
Yeah that's the New York style
In France, we only have butter
on our shirt
different countries, different cultures, different stains
What is happening, like stones are falling from the sky
it's the end of the World, I'd rather not be in New York when it's the end of the World
It's always the end of the World in this city

It's the middle of cooking right now
I just want to give you guys
a quick heads up on three key points of this recipe
The first one is Gruyere cheese
We've been using a french cheese, that's very nice of you Katie
It's only right, it's only right
Thank you very much, but in France, normally people would use
Emmental cheese instead, which is -don't tell anyone- a Swiss cheese
The second one, Katie, what is this?
Okay, so we are using butter here, instead of ghee
so ghee is really a popular thing to use in Indian cuisine
but it's cool because ghee is basically just clarified butter
And the third one is this one, this is Paneer
Paneer is some kind of an Indian cheese I Guess,
Katie made this great picture about it
it's some kind of a pressed ricotta
