Today we are going to make something delicious with kimchi. 今天我們要用泡菜來做好吃的東西 Lots of kimchi. 會用到很多泡菜 Do you guys have kimchi at home? 你家裡有泡菜嗎? Are you making homemade kimchi? 你有自己做泡菜嗎? Then you can make this very easily. 那你可以很輕易地做這道菜 Kimchi pork buns. 泡菜豬肉包 In Korean, kimchi-ppang. 韓語是泡菜包 So we need lots of kimchi inside. 所以我們會需要包入很多泡菜在裡頭 It should be fermented, which means they're sour tasting. 需要用到已經發酵的泡菜,也就是說嚐起來有酸味的泡菜 With a well-fermented kimchi, 你有已發酵的泡菜 you can make a kimchi stew, kimchi soup, kimchi pancake, 你可以做燉煮泡菜、泡菜湯、泡猜煎餅、 kimchi stir-fried rice, kimchi steamed kimchi, 泡菜炒飯、蒸泡菜 What else? 還有呢? A lot of lot of delicious dishes that you can make. 你可以做超多好吃的料理 First, we need to make dough. 首先,我們要來準備麵糰 So I'm using this flour, all purpose flour, 我使用中筋麵粉 and also I use dry yeast. 還有乾酵母 It's active dry yeast. 這是速發乾酵母 I'm making six buns today. 今天我要做六個包 So you guys can double, triple this recipe 你可以用兩倍、三倍的材料 and you can make a lot. 就可以做很多包子 I need one cup of warm water. 我需要一杯的溫水 It means not hot, boiling water. 不要使用熱的、沸騰的水 Dry yeast will be killed in hot water. 乾酵母在熱水中會失去活性 I'm going to make your life easier, how to make warm water. 為了讓你們更容易準備材料,我示範如何準備溫水 Measure half a cup boiling water. 量出半杯沸騰的熱水 And then cold water, half a cup. 接著加入半杯冷水 Total, one cup. 總共是一杯的水 Lukewarm. 微溫的水 Before adding yeast, let's use one tablespoon sugar. 加入酵母前,先加入一大匙的糖 And mix well. 攪拌均勻 And then let's add yeast, one teaspoon dry yeast. 接著加入一茶匙的酵母 And then let it sit. 然後靜置 My water is still boiling. 我的水還在煮 I need to cook my noodles. 我要用來煮麵 These noodles are called dangmyeon in Korean. 這種麵韓語稱為 dangmyeon (韓式冬粉) Sweet potato starch noodles, or some people call this 馬鈴薯澱粉製成的麵條,或是有人會稱為 glass noodles. 冬粉 I'm making six buns today. 我今天要做六個包 I will use only one ounce. 我只使用一盎司的冬粉 Several minutes I have to cook, seven or eight minutes. 我大約需要煮數分鐘,約七、八分鐘左右 Then let's go back to our dough. 接著我們回去看看我們的麵糰 So yeast water is here. 這邊是我們的酵母水 See, now yeast is floating. 你看,酵母粉浮在上面 Half teaspoon salt. 加入半茶匙的鹽 I will add this vegetable oil, one tablespoon. 加入一大匙的植物油 And then mix well. 接著攪拌均勻 Now we're gonna add flour. 現在我們要加入麵粉 2½ cups flour. Mmm! 哇! I will measure eight ounce. 我要取出大約八盎司的泡菜 I think this is a little more than eight ounce. 我覺得這樣比八盎司稍微多一些 This is eight ounce. 這邊是八盎司的泡菜 (laughs) Put it back to the refrigerator. (笑)把泡菜放回冰箱 This is our filling for six buns, around three cups. 這是我們準備包入六個包的內餡,大約三杯的量 Half a cup filling in each bun 一個包子會用到半杯的內餡 because I like to make kind of a small meal. 因為我想做稍微小一點的包子 If you finish your one bun, you are full enough. 吃完一個包子,你差不多就飽了 Half teaspoon sugar. 加入半茶匙的糖 Sour taste and sweet taste always go well together. 酸味和甜味總是很搭 Just a half a teaspoon sugar. 只要加入半茶匙的糖 And this make it more spicy looking, 這個(辣椒粉)會讓它帶點辣味 And then I will add one teaspoon hot pepper flakes. 我要加入一茶匙的辣椒粉 You know, Kimchi is salty enough, so we don't need to add salt. 泡菜已經夠鹹了,我們不需要再另外加鹽 Smells good, because, you know, sesame oil, 聞起來很香,你知道的,因為我們加入香油、 All this mixture, kimchi pork mixture. 泡菜、豬肉等等 Even this one, pork is fully cooked, so I can eat it. 就算只有內餡,因為肉已經煮熟了,所以我可以直接食用 I can eat it now. 可以直接吃了 And let's wait for the dough to be ready. 接著等我們的麵糰發酵完成 (upbeat music) (上揚的音樂) Whoa, you rose a lot! 哇,麵糰已經膨脹很多! Mmm! 嗯! Smells yeasty. Our six buns, large buns. 這邊是我們六個大包子 We need to wait. 我們還需要做二次發酵 I usually do this one hour. 我通常會再發酵一個小時 So total, three hours. 總共發酵時間三小時 It takes a long time, I know. 我知道會需要很查的時間製作 (upbeat music) (開心的音樂) I was going to rise for one hour but changed my mind 原本要再發酵一個小時但我改變心意了 because when I see these guys, really plump. 因為我看到包子已經變得圓滾滾的 Rose already a lot. 發酵得夠大了 Even these guys are connected to each other. 都黏在一起了 And I gotta bake them now. 我準備要開始烘烤了 I preheat my oven, 350. 我已經將烤箱預熱 華式350度 One small egg and then one teaspoon water. 加入一顆蛋和一茶匙的水 Then strain this. Through this. 用濾網將蛋液過濾 And a nice egg wash we made. 做出沒有雜質的蛋汁 And then brush this egg wash nicely. 將包子刷上蛋汁 When they bake, a really pretty color. 在包子烘烤的時候,顏色會很好看 Let's bake! 把包子放進烤箱 Then... 我要烤20到25分鐘 I will bake 20 to 25 minutes. 我會在20分鐘的時候去檢查一下 I'm going to check it after 20 minutes. 好興奮呀! Exciting! 有些人可能會想用蒸的 Some of you guys might be interested in steaming these. 在二次發酵後就可以拿去蒸了 After all these buns rise and then steam 蒸大約15到20分鐘 for 15 to 20 minutes and then you will have 白白胖胖的包子就出爐啦 a really nice fluffy white steamed buns. 20分鐘後,我已經看過了 After 20 minutes, I check it out. 我想讓顏色再深一點 And then I like to make it a little dark, 所以我想再烤五分鐘 so that's why five minutes more. 我總共要烤25分鐘 金黃的包子就出爐了 So total 25 minutes, really nice golden brown on top, 很有光澤、好看的包子 very shiny and pretty. 你看看 Look at that. 三個、三個一列,它們處得很好 [應該是排排站很可愛的意思吧XD] Three amigos, three amigos, they really get along well. 真棒,看起來很不錯 Awesome, looks so good. 我還不能摸因為現在還很燙 I can't touch because it is too hot right now. 還是很燙 Still very hot. 看到了嗎? See? 你看看 See? 有很多泡菜、豬肉在裡頭 A lot of kimchi inside and pork. 你看,麵包也很鬆軟 And bread is very fluffy, see? 天阿,看起來超棒的,不是嗎? Oh my, looks so good, doesn't it? 我幹嘛跟你們用氣音講話? [XD] Why am I whispering to you? (笑) (laughs) 我來嚐看看 Now let me taste. 嗯! Mmm! 嗯! Mmm! 好吃 Delicious. 嚐起來很香辣 泡菜很非常脆 Spicy and kimchi is very crispy. 豬肉、冬粉、全部的內餡非常好吃 And pork and noodles, all mixture is really awesome. 我特別喜歡這個鬆軟的外皮 Especially also I like this fluffy bun. 我忍不住一直吃 I can't help eating, keep eating. 我怎麼能把這個包子分給任何人?
