(韓文的韭菜蝦水餃) Made with just only a few ingredients. 我們只需要幾樣材料 But really tasty, so you'll be surprised. 但是非常好吃, 你會很驚訝的 Most of all, you'll be happy to learn 你們會很開心的學會 how to make this, make shape, like a 怎麼做這個, 捏形狀, 像 pleated skirt, really wrinkly, kind of cute pouch. 百褶裙, 皺皺的,舊像個可愛的小包包一樣 After making this, I'm going to steam this 做完之後, 我會用竹子做的蒸籠, with my bamboo steamer. 去蒸 Let's start. 我們開始吧 So this is half pound of shrimp. 這裡是半磅的蝦 I already washed and cleaned and deveined. 我已經清理過, 並去除腸泥 This is Asian chives, in Korean, buchu. 這是韭菜, 韓文叫做Buchu four ounces. 我們使用四盎司 I'm going to chop these guys into little small pieces. 把韭菜切成小顆粒狀 You can get it in Chinatown or Korean grocery store, 你可以在韓國超市, 中國城 or sometimes Japanese store you can find this. 或是日本超市買到韭菜 Whenever I go to Chinatown, all year round I can find. 每次我到中國城,幾乎都可以看到韭菜 When these guys are cooked, really tasty. 韭菜煮熟之後會非常好吃 And also color is really pretty, make it 顏色也很漂亮, 會變成 really green color. 很綠的顏色 We are going to use this shrimp. 我們開始來處理蝦 This shrimp, the reason I separated this, 這個蝦阿, 為什麼我會另外把它放起來 I'm going to show you how to clean this. 是因為要給你們看如何清理 Shell this way. 這樣剝 And like that. 像這樣 around this back part, it has 在蝦子的背面, 有 intestine, sometimes a big intestine, 腸子, 有時會有很粗的 sometimes very clean, this is very clean. 但幾乎都很乾淨,像這隻蝦就很乾淨 Very clean. 非常乾淨 And then one time quickly rinse this. 然後把它稍微沖一下下 (running water) (水聲....) Let's add salt, half teaspoon. 我們把鹽加進去,大概半茶匙 Ground black pepper, half teaspoon. 一些黑胡椒,大概也是半茶匙 Sesame oil, two teaspoons. One, two. 麻油, 兩茶匙. (數數中...1...2....) We made 25 dumplings. 我們大概做25個 All 25 members are good-looking. 這25個全部都很漂亮 I'm going to take some for steaming 我拿一些去我們竹子蒸籠 with my bamboo steamer. 去蒸 The reason I like a bamboo steamer is 為什麼我喜歡竹子蒸籠 that you can steam here and serve, 是因為你可以直接蒸然後直接端到桌上 and you don't need to take it out with 你不用再把它拿出來,還要用夾子 tongs, you know, to the plate, you don't 你知道的,還要放到盤子上, 你可以不用 have to do that, just serve, 那樣做,只要直接端到桌上就好了 so that's very convenient. 這樣比較方便 I'm just boiling my water, and I'm using 我煮開了水, 然後我用了 this parchment paper. 這種像是烘焙紙 The size is large, I like to cut it. 這個太大了, 所以我喜歡剪一下 This steamer liner is sold at a Korean grocery store, 這個蒸紙韓國超市有賣 and it has, even holes here. 這個紙甚至有洞洞 Eight. 八個! Then, to here. 然後, 放上去 And then let it steam. 就讓他蒸 The mandu looks a little translucent 當水餃看起來有點透明 and clear-looking, and then it's well-cooked. 然後可以看到裡面的內餡, 就代表熟了 I will just make 20 minutes, set. 大概20分鐘就可以上桌了 This guy I'm going to freeze. 這些我要拿去冷凍庫冰 This is my mandu. 這是我的水餃 This one is, inside, pork. 這個裡面有豬肉 This is shrimp, so sometimes I feel 這個是蝦,所以有時候我 like shrimp, and then I eat this, 想吃蝦的時候我就會吃這包 sometimes I feel like pork, especially 有時候想吃有豬肉的, 特別是 fried ones, so pork is very tasty. 煎的, 豬肉的會非常好吃 This is my always emergency food. 這些總是我沒時間做飯時的快速食物 Any of my guests are coming suddenly, 如果任何一位我的客人突然跑來 and then "okay, I'll make this!" 我就可以直接做這個 Soup or fried mandu, homemade mandu, 湯的或是煎的,自己做的水餃 everybody loves that. 每個人都喜歡 These, I'm going to freeze. 這些我要拿去冷凍 You guys just saw my freezer. 你們剛剛有看到我的冷凍箱 My freezer is my number one important property, 我的冷凍箱是我最重要的財產 because in my freezer, all kinds of 因為裡面有各式各樣的 ingredients, something like some Korean jujubes, 食材,像是韓國棗 dried jujubes and pine nuts, you know, 乾的棗和松子,你知道的 all kind of stuff, even squid, frozen squid 各式各樣的東西,甚至花枝, 冷凍花枝 is there, so if I don't have these kind of 在裡面, 所以如果我沒有這些 ingredients, I feel uncomfortable, I gotta 食材的話,我會覺得不舒服, 我要 fill it up, my freezer, but now it's almost, 把它填滿,我的冷凍箱, 現在幾乎 some of them are empty, I need to bring more. 大部分都是空的,我需要再去買了! Sometimes I have some inspiration, 有時候我有一些靈感 "oh, I gotta cook, I gotta make this recipe," "喔!我得馬上煮!我得做出食譜" and then my ingredients are always ready. 然後我的食材都準備好了 Let's make sauce. 我們來做沾醬 Soy sauce, about two teaspoons. 醬油,大概兩茶匙 One teaspoon vinegar, I'm using apple vinegar now, 一茶匙的醋, 我現在用的是蘋果醋 but you can use apple or white vinegar. 但你也可以用白醋 Korean hot pepper flakes. 韓國辣椒粉 And sesame seeds. 還要一些芝麻 See, this is a dipping sauce. 看到了嘛!這就是沾醬 20 minutes passed. 20鐘過去.... Yeah, I think we're done. Translucent. 耶!我覺得好了!透明的 Besides, my water is all gone. 此外, 水也都沒了 There's some only on the bottom part, a little bit. 整剩下底部一點點 Turn off. 關火 Oh my! 我的天! My God, smells so good. 天啊!超箱的 one pouch. 一個袋 I will show you inside. 給你們看裡面 Ooh, look at that! 哇!你們看! It's very sweet and juicy and shrimpy. 這個非常甜,多汁,蝦味也很重 And texture is very chewy and springy. 也很有嚼勁很有彈性 And hot! (chuckles) 燙!! The three ingredients in filling are 這三個食材的餡料 working in harmony. 在一起非常的和諧 Today we made saeu buchu mandu. 今天我們做了水餃 Shrimp and Asian chives dumplings. 蝦和韭菜的水餃 Enjoy my recipe, see you next time!
