Yum, yum. 泡菜 One important ingredient. 我的泡菜已經熟的很好了 What is it? 吃起來酸酸的 Kimchi! 我只需要大概一杯 My kimchi's well fermented. 切一切 It tastes sour. 我會用這個鍋子煮 I need only around one cup. 先看一下飯 And cut this. 很棒 I will use this pot. 已經好了,把火關掉 Let's see my rice. 開火囉 Nice. 中大火 Well done, I'm going to turn off. 麻油,大概兩茶匙 Let's heat up. 蒜頭 Medium-high heat. 洋蔥 Sesame oil, around two teaspoons. 肉 Garlic, 接下來加一茶匙的醬油 onion, 還有磨碎的黑胡椒 and meat. 大概四分之一茶匙 And I will add one teaspoon soy sauce. 翻炒一下 jin-ganjang, and ground black pepper, 在接下來的幾分鐘都要持續不停的翻炒 around a quarter teaspoon. 炒到肉變色 Stir this. 然後把泡菜加進去 You just keep stirring around a couple of minutes, 泡菜要煮過,翻炒一下像這樣 until this pork is no longer pink, 我會炒到泡菜變軟,有一點萎掉的程度 and then I will add the kimchi. 我會讓它再繼續煮四到五分鐘 Kimchi has to be cooked, stir fried like this. 只要你一把泡菜加進去,泡菜汁就會跑出來 I would just stir fry until kimchi's 翻炒就會變得輕鬆 a little withered and softer. 我還記得第一次看到這道菜時 I will just keep cooking about four to five minutes. 那時是嚴冬 Once you add the kimchi, the kimchi brine comes out. 我的阿嬤,她總是很寡言 So easily you can keep stirring. 不論我阿公說什麼,她從來不回嘴 First time when I saw the kongbiji-jjigae 阿嬤真是仁慈 was really cold winter. 我永遠都不會忘記豆渣湯背後的這個故事 My grandmother, she's always quiet. 然後有一天 Whatever my grandfather said, she never talked back, 那天剛好市場有開 kind of a grandmother. 我阿嬤問我「要一起去嗎?」 I never forget this story relating to my kongbiji-jjigae. 當然,我超愛市場的 And one day my grandmother, 就算到現在,我還是超愛去市場的,你們喜歡嗎? there was an open day at the market, 她說「告訴你阿公你需要一些錢買好吃的」 and said, "oh, you wanna follow me?". 像是蒸玉米跟年糕 Of course, I love to go to the market. 所以我就跟阿公說我需要一點錢 Even now, I love to go to the market, you guys too? 我想吃蒸玉米 My grandmother said, "tell your grandfather 我阿公就給我 you need some money to buy some delicious stuff", 然後我就跟阿嬤去逛市場了 such as steamed corn or rice cake. 我們去了豆腐店 So I told him, "grandfather, I need some money, 然後阿嬤說她需要豆渣 and I wanna eat some oksusu, jjin-oksusu (steamed corn)". 店員就給她一球 My grandfather gave me some money. 看起來就像瑪茲瑞拉起司 So I went to the market with my grandmother together. 我阿嬤為什麼買這個呢? We went to the house where we could buy tofu 那是我還在想 and she asked, "oh, give me some biji, kongbiji". 隔天早上她就煮了這一鍋 They gave her a ball. 啵啵作響又好喝的湯 It looked like mozzarella cheese. 我已經炒五分鐘了 "Why grandmother buy that kind of stuff?" 把高湯加進來,一杯半 I was just wondering. 聞起來真香 Next morning she made such a beautiful, gorgeous, 有炒泡菜的味道 bubbling stew, and...(alarm bell goes off). 我們還有剩一些湯 Five minutes I kept stirring, 你們可以再煮一鍋 Let's add stock, one cup, and a half cup. 加一點水,再煮沸一次 Wow, smells so good! 做出一杯半 Once I stir fry kimchi. 美味的鯷魚昆布高湯,還有豬肉 We still have some leftover stock here. 泡菜、蒜頭、洋蔥 You guys can make more, next batch. 鐵定好喝的 Add some more water, boil more, 接下來把豆渣加進來 and then make one and a half cup. 啵啵的滾著呢 Delicious anchovy kelp stock, and pork, 攪一攪 and kimchi, and garlic, onion. 加入大蔥 It should be delicious! 青辣椒 And now let's add. 不要蓋鍋蓋餒 And here, it's bubbling, right? 就讓它一直滾不要蓋 Stir like this. 不需要一直叫動它 And green onion. 像這樣就好 Green chili pepper. 我們想要的是濃稠滾燙的豆渣湯 You don't have to cover this, 只要豆子煮好就可以喝囉 just let it boil without the lid. 通常我們還會加鹽跟蝦醬 You don't have to stir harshly. 你們知道蝦醬吧 Like this. 加蝦醬是傳統做法 What we want is a heavy, bubbly, creamy biji-jjigae. 但如果你們沒有這個 Once the bean is cooked, and we can eat it. 就用魚露吧,一茶匙 And usually we salt with shrimp sauce. 如果你是素食者,加鹽調味就好 You know saeujeot. 舀多一點湯,一湯匙 This is a real traditional way, 你們覺得怎麼樣? but if you don't have this, 看起來很好吃齁 just use fish sauce, one tablespoon. 讓我嚐嚐 If you are vegetarian, use just one teaspoon salt. 噢~~我的天真是太好吃了 Scoop more juice, one table spoon. 我會先關火 What do you think? 加入青辣椒跟大蔥 It looks delicious, isn't it? 還有紅辣椒,在擺盤之前加就好 Let me taste! 我們會在它啵啵的滾著時呈上桌 Mmm, mhm, oh my, good, good. 我阿嬤這時都會說「打開桌子」 I will just turn it off. 韓國的桌子不像西方的餐桌 Green chili pepper, green onion, 你只能坐在地板上 red chili pepper, add them just before serving. 那種桌子的腳很短 Then I will make it bubbling and serve. 所以坐下後,桌子的大小就那麼剛好 Always my grandmother said, "open the table." 大家圍著桌子坐著一起吃 A Korean table is not like a usual western style table, 桌子的腳是可以被折起來收納的 just you can sit down, you know, on the floor. 所以收納很方便 The table's legs are short, 通常都會放在角落 so when you sit down, it's a perfect size. 在阿嬤家的角落 Everybody's sitting around it together and eating. 那裡有一個很棒的箱子 The legs are folded, you can fold. 一個木製的飯匣 So this is easily, you can store, 在飯匣跟牆之間有一道縫隙 like between, usually the corner. 她把很多小的韓式飯桌放在那個大縫裡 At the corner of my grandmothers house, 然後飯桌的大小取決於吃飯的人數 there was a rice chest. 就就會把桌子搬出來 A nice, wooden rice chest there, 然後阿嬤就給他小菜跟白飯 and between the wall. 最後一分鐘,豆渣湯就會被端上桌 there's a large gap. (laughing) 飯跟一些小菜 Oh my! the taste was so good! 花椰菜,這是我用來配湯跟飯的小菜 I just tasted this. 這道菜的食譜在我的網站上有,你們可以輕鬆的做出來 If my grandmother were still alive, 最近韓國的蘿蔔正當季 she would give me tons and tons of compliment. 很多汁 "Yes, you are good, you are good!". (laughing) 我還有做辣蘿蔔泡菜 Oh, I made rice. 每次吃完的時候就要再做一次 Rice and some side dishes. 因為要把握盛產的季節 Broccoli, this is my side dish 這是鯷魚小菜 for this kongbiji-jjigae and rice. 小隻的乾鯷魚 This is one of my recipes on my website. You guys can make this easily. 我今天早上才做 These days, Korean radish is so delicious. 醃烏賊 Very juicy! 這也是我的食譜中的其中一道 And I made kkakdugi. 很夯的食譜 When I run out of kkakdugi, I have to make it again, 我知道你們有很多人做了這道菜 because we should take advantage of its peak time. 這個烏賊用鹽醃漬了一個月 And this is myeolchi-bokkeum. 然後把鹽洗掉 Small dried anchovies. 切一切,再跟醬料拌一拌 I made this this morning. 超好吃的 Fermented squid. 一切就緒!! This fermented squid is also one of my recipes, 今天煮了蓬鬆的白飯 very popular recipe. 加一些增添顏色的蔬菜 I know a lot of you guys make this. 很濃稠呢 This is squid, squid one month fermented with salt, 看看,看起來很好吃吧 and then, salt is washed away, 嗯~~ and then chopped up, and then mixed with 滿滿的豆味還很濃稠 with seasoning sauce. It's really tasty. 我吃的時候通常都會挖一些放在飯上,像這樣 Okay, time to eat! 嗯嗯~~真好吃,想一直吃下去 I made white fluffy rice today. 讓我想起了阿嬤的味道 Let's add colorful vegetables. 我們今天做了豆渣湯 Wow, very thick, isn't it? 你們可以試著多做幾份 Looks delicious, look at this! 然後跟一堆人分享 Mmm~ 請用我的食譜 Very nutty, this is very, very creamy and nutty. 下次見囉~ Usually how I eat this, I scoop some, 掰掰 put some on my rice, like this.
