I taste it. 在幾間賣部隊鍋的餐廳也嚐了一下 Really popular dish everywhere. 很多人喜歡的一道菜 Always in restaurant, famous restaurant for budae-jjigae 有的餐廳做得部隊鍋很有口碑 packed with people. 人滿為患 Wow, there must be a reason why they like it. 這道菜一定有吸引人的地方 Actually, like the Spam sliced really thinly, you know Spam, 其實罐裝火腿切片 nobody will think that this is very appealing. 大家覺得沒什麼 But when it cooked with kimchi and spicy seasoning paste, 但是當它與泡菜和辣醬 sizzling, bubbling kind of a stew, it really tasty. 一起烹煮 熱騰騰的 真的很美味 It go well together and especially when you eat with rice. 味道十分融洽 很下飯 So, let's start. 好的 我們開始吧 To make delicious stock using two dried shiitake mushrooms 做一個好的湯底我們需要兩隻香菇 and the larger size of dried anchovies. 還有大的鯷魚乾 Remove the heads. 把頭去掉 And remove guts. 還有腸子 It's a kind of a black things, remove this. 就是黑的這一塊 把它去掉 And very clean and put it in this strainer. 弄乾淨以後 放進這個濾網球中 So eight, large size dried anchovies in the strainer. 八隻大的鯷魚乾 在濾網球裡 Let's put it here. 先放在這 This is dried kelp, it's called dasima in Korean. 這是海帶 韓文叫다시마 Korean grocery store you can buy. 在韓國超市可以買得到 Always I have at home because whenever 這是我家裡常備用的 I make some stock I always use. 因為我做高湯時經常用到 So, like this. 就像這樣 And then, I'm going to cut this down to this size. 我把它剪成小塊 And then put it. 然後放入鍋內 Close the lid and boil. 把蓋子蓋上 我們可以開始煮了 Over medium-high heat, I'm going to boil this, 中高火 煮開 my stock, for 25 minutes. 煮二十五分鐘 While we are boiling this stock, 煮這個高湯的時候 let's prepare some other stuff. 我們來準備其他的東西 This is noodles called dangmyeon. 這是一種麵條叫당면 Sweet potato starch noodles. 地瓜澱粉做的冬粉 Some people call this glass noodle because it's translucent. 它是通明的 所以在這裡又叫“玻璃粉” Very hard. 很硬 I'm going to use around two ounces. 我這裡用兩盎司 Let's soak in cold water. 浸泡在涼水裡 Then, let's make seasoning paste. 然後我們做調味醬 Seasoning paste, you know, it has to be spicy. 一定要是辣的 Six garlic cloves. 六瓣蒜 I just chose large garlic cloves and cleaned. 我選了一些大的蒜瓣 洗净了 Hot pepper paste, one tablespoon. 韓式辣醬 一湯匙 Two tablespoons, hot pepper flakes. 兩湯匙 韓式辣椒粉 Flakes, two tablespoons. 這個辣椒粉 兩湯匙 One teaspoon, sugar. 一茶匙的湯 One teaspoon, soy sauce. 一茶匙的醬油 About two tablespoons, water. 大概兩湯匙的水 So we make seasoning paste. 調味醬就做好了 This is a lot of garlicky and salty, 蒜味很重也很鹹 and sweet, and spicy also. 也有甜味和辣味 Very good. 很好 Very good, spicy. 十分辣 And then I'm going to use some pork belly. 然後我用一些五花肉 Cut into bite-size pieces. 切成入口的小塊 Stock is really boiling and then 高湯已經煮開了 I see that a lot of bubbles coming up. 我看到都冒泡了 And it maybe boil over. 如果怕湯沸騰出來 So in that case, you open this like a half, right? 你可以把鍋蓋掀開一半 And then still at medium-high heat, let it cook 這樣仍然用中高火 讓它繼續熬煮 until fully cooked 25 minutes. 直到熬煮二十五分鐘 I'm going to add this pork to my boiling stock. 我要把豬肉加入我的高湯中 We are going to cook this pork with this boiling stock, 用這個湯把豬肉燙熟 10 more minutes from now. 煮十分鐘 So my stock is done. 我的高湯做好了 Oh my God, so quiet. 天啊 關掉吸油煙機好安靜 Anchovies. 鯷魚乾 Well, look at this kelp is really huge, eh? 你看 海帶煮開了變得很大 It was small. 之前很小一塊 So two shiitake mushrooms and pork. 然後兩隻香菇和豬肉 Mushrooms. 香菇 Let it cool down. 讓它放涼 And this is pork. 這是豬肉 We have this delicious stock. 我們美味的高湯就做好了 Add one teaspoon salt. 加一茶匙鹽 Let it cool here. 放涼待用 So pork. 然後豬肉 Actually kelp looks good, slice it thinly 這海帶不錯 切成絲 and then stir fry it with soy sauce and 用醬油翻炒 a little bit sugar and garlic, it'll be good side dish. 一點糖和蒜 就是一盤小菜 So don't throw them away and then later, use. 所以不要扔掉喔 留著待用 I prepare my kimchi, tongbaechu-kimchi here. 我要準備泡菜 大白菜做的泡菜 We are going to use only half a cup. 我們只需要半杯 My shallow pot. This pot, usually 我的平底鍋 when you go to Korean restaurant, 你去韓國餐廳的時候 they serve in this kind of pot. 部隊鍋都是裝盛在這種鍋裡 Because you can see the whole, 以為這樣所有的食材都 all ingredients inside easily. 一目了然 Not deep pot, right? 記得要用淺的平底鍋 A little bit cabbage. 一點包心菜 This is going to be around one cup. 需要一杯左右 And then, onion. 然後洋蔥 This is 1/3 cup onion. 三分之一杯 I use a really huge green onion. 我用了一根很大的青蔥 You can use two small green onion. 你可以用兩根小的 Let's add this pork, already cooked. 把這個煮熟的豬肉加進來 Pork. 豬肉 And these mushrooms. 然後這些蘑菇 I use all this stem too. 香菇的梗我也用 Mushrooms. 香菇 And it's too big. 這個有點太大了 And then I'm going to add kimchi. 然後我要加入泡菜 Just half a cup I'm going to use. 只用半杯 Okay. This amount. 這樣剛好 Let's add our spicy seasoning paste. 調味醬也加進來 This is Polish sausage. 這是波蘭香腸 I use this, I found is really tasty 我試著加這種香腸在這個鍋裡 when it's cooked in the stew. 發現很不錯 So I'm going to use this here. 所以我要用這種香腸 This is four ounces. 四盎司 Spam, I'm going to use. 罐頭火腿 Okay. 好的 Thinly slice. 切薄薄的一片 Let's use, just 1/3. 用三分之一罐 This amount save this for later use. 剩下的之後用 So ham, sausage, and tofu, and cheese, 火腿 香腸 豆腐 和 起司 and this is rice cake, rice cake. 還有年糕 And then the noodles we have soaking right now. 我們剛剛泡的冬粉 And then beans. 然後這些焗豆 Huge amount, right? 很豐富吧 So we just add it little by little. 我們一點一點的加 And this. 加入這個 Sausage. Rice cake. 香腸 年糕 And tofu. 還有豆腐 We are going to use 1/4 only. 我們只用四分之一 And this baked beans, pork & beans. 然後焗豆 是豬肉焗豆 You can choose either one. 你也可以用素食的 This is the vegetarian beans. 這是素食焗豆 So with this kind of seasoning mixture it is. 裡面有調味汁 I'll use around a 1/4 cup. 我要用四分之一杯 With some juice. Yeah. 加一些它的調味汁 Cheese. Just one slice cheese. 起司 一片就好 And then noodles. This is Korean ramyeon. 然後麵 這是韓國速食麵 So ramyeon, for this, half. 用一半 Half. 這樣一半 This is noodles we soaked. 只是我們浸泡過的冬粉 Potato starch noodles. 地瓜澱粉做的冬粉 Huge, eh? 變大了是不是 You can use watercress or you can use any, even spinach. 你還可以加西洋菜 甚至可以用菠菜 This is radish sprouts. 這是蘿蔔苗 There you go. 放在上面 So let's pretend this is your table. 想想這是你的餐桌 Large table, your guests are sitting. 你的客人圍席而坐 While you guys are talking, it's going to cook. 在熱烈交談之中 部隊鍋煮開了 It should not be too filled, right, 不要太滿 in the case of maybe boil over. 不然會水滾出來 And then the leftover, just transfer to another bowl. 剩下的高湯 放在另一個碗裡 Nice bowl. 漂亮的碗 And then 然後 with your ladle. 用你的湯勺 So while you are cooking, usually, 在燉煮的同時 like a sizzling. 咕嚕咕嚕冒泡的時候 As this broth reduce, add some more with this stock. 如果湯開始煮乾了 緩緩加入更多的高湯 Just over high heat, medium-high heat. 中高火就可以了 Usually gas stove is a very strong flame. 瓦斯爐一般火力都比較大 So just heat it up and then you guys can drink, 加熱的同時 大家可以飲酒談天 talking, waiting until this is cooked. 直到鍋煮開 I made my rice. 我做了米飯 And also, when you eat this, 還有當吃部隊鍋的時候 be sure to prepare the individual bowl. 預備每人一個湯碗 It's bubbling over, turn down the heat. 煮沸了以後 把火關小 Control your heat. 控制火力 So from now, you guys can, you know sitting around, 然後就可以圍爐開吃了 so you can taste this some. 試試這個 Oh, this is sausage. 這是香腸 Good. 很好 Nine, ten minutes. 十分鐘左右 After that, you just mix this with your tongs, like this. 你可以開始用廚房夾 攪拌一下 Time to eat! 開吃! Look at this broth. 你看這個湯頭 So always add, right? 不夠就加一點 And you can turn it up. 然後再把火力調大 And then first, always my rice. 先吃一口飯 I know that when you taste one bite, 只需要嚐一口 you know why people love this budae-jjigae. 你就知道為什麼大家喜歡部隊鍋了 Because this stew has all kinds of stuff. 因為這鍋食材豐富 I love this noodles also, you know? 這麵條是我的最愛 The starchy noodles and even ramen. 冬粉還有速食麵 So while you are cooking and eating, 一邊煮一邊吃 you have a really fun. 很好玩 Everybody's sitting at the table and then you 大家同坐一席 cook together and then eating and drinking. 一邊煮一邊吃一邊聊天一邊喝酒 The broth is more and more delicious. 鍋越煮越入味 We made it, budae-jjigae.
