  • Today, I'm going to show you how to make really delicious

    泡菜薄餅

  • kimchi pancake.

    韓文叫 Kimchijeon,好簡單,好易整!

  • In Korean, kimchijeon, very simple, simple to make.

    你要有泡菜係屋企,無論係自家泡菜

  • You have kimchi at home, homemade kimchi

    或者買返嚟嘅泡菜都無問題

  • or even store-bought kimchi, it doesn't matter.

    任何泡菜都可以做到,但要留意要準備酸泡菜

  • Any kimchi will work well, but be sure to prepare sour taste kimchi

    亦即係發酵泡菜

  • which means fermented kimchi.

    所以,如果你有發酵泡菜

  • So, if you have fermented kimchi

    咁你就可以做到好好味嘅泡菜薄餅喇!

  • then you can make a really delicious kimchi pancake.

    當薄餅係煎緊,外面脆

  • When it's pan-fried, outside is crunchy,

    入面喺又甜又爽脆嘅泡菜

  • inside is kind of sweet and crispy kimchi

    同帶有香濃酸甜味道

  • and a little tangy taste sweet and sour,

    係大家都鐘意嘅泡菜薄餅

  • Everybody loves kimchi pancake.

    你唔需要其他特別既材料

  • You don't need any other special ingredients.

    如果有人話「我唔識煮野食」

  • Anybody who says, "I cannot cook!"

    「噢,Maangchi示範嘅呢樣,依家我識煮喇!」(笑)

  • "Oh, Maangchi showed this, now I can do!" (laughs)

    我會做一塊大嘅薄餅

  • I will make just one large size pancake,

    你可以將個食譜份量雙倍或者三倍份量去做

  • and you can double, triple the recipe.

    我哋需要半磅泡菜,呢個係我嘅泡菜儲存盒

  • We need 1/2 pound kimchi. This is my kimchi container.

    我大約係兩個月前就做呢盒泡菜

  • I made this kimchi almost 2 months ago.

    好酸

  • Very sour.

    好喇,呢度有8安士。拎好我哋要用嘅泡菜後,

  • Okay, this is 8 ounces. After taking some kimchi,

    需要經常咁樣壓壓佢

  • always press it down.

    你見到啲泡菜腌汁

  • You see kimchi brine.

    需要兩匙嘅泡菜腌汁

  • Take about 2 tablespoons kimchi brine and add.

    我嘅寶具儲存盒!

  • My precious container!

    只要我有呢盒嘢,我就可以煮到任何菜式

  • As long as I have this I can make all kinds of dishes

    用呢個發酵泡菜

  • with this fermented kimchi.

    今日就只係泡菜薄餅日!

  • Today is just a kimchi pancake day!

    我會用我呢個大砧板

  • I am going to use my large cutting board.

    就咁切切切

  • just to chop it up.

    (沖水)

  • (water running)

    我會加小小洋蔥

  • I'll add just a little bit onion

    因為洋蔥會增加甜味

  • because the onion makes it a little sweet.

    所以我會加啲切碎咗嘅洋蔥

  • So I will just add chopped onion

    大約兩湯匙

  • around 2 table spoons.

  • Add onion.

    好喇,我哋唔再要用個砧板喇,搞掂!

  • So we don't need the cutting board anymore, all done!

    我只係要再加啲麵同水再混合埋一齊

  • I can just mix this with flour and water.

    直至依家我哋整咗幾耐?

  • So far How long did it take?

    我諗只係一分鐘 (笑)

  • I think only 1 minute. (laughs)

    半杯麵粉

  • 1/2 cup flour.

    同半杯水

  • and 1/2 cup water.

    最近我改用代糖取代替糖

  • Instead of sugar these days I'm using swerve,

    零卡路里,同等份量嘅糖,半個茶匙

  • a zero calorie, the same amount of sugar, 1/2 teaspoon.

    大量嘅泡菜

  • A lot of kimchi!

    麵粉嘅作用好似膠水咁

  • We use flour as glue.

    燒熱煎鍋

  • I will heat my pan

    我哋韓國人經常有發酵泡菜

  • We Koreans always have fermented kimchi

    喺雪櫃

  • in the refrigerator.

    特別係落雨嘅日子,全家聚埋一齊

  • Especially on rainy day, all family get together,

    我哋就會需要食啲嘢

  • and we need to eat something kind of snack.

    「你有係啲蔬菜喺屋企?」

  • "You have any vegetables at home?"

    我哋就會整蔬菜薄餅,或者用任何翠玉瓜,或者蔥

  • We make vegetable pancake or use any zucchini or chives,

    我哋就會成日整薄餅

  • so we make pancake all the time.

    而泡菜薄餅係其中一樣我哋會整嘅

  • Kimchi pancake is also one of the pancakes we make.

    我哋會整一大批

  • And then we make a big batch.

    整好多,然後一齊食

  • I make a lot and we eat.

    第二批又嚟喇!

  • The 2nd batch is coming!

    全家一齊係度食

  • All family are eating together.

    真係好好味!唔係淨係我哋家族

  • That was really delicious! Not just my family,

    係好多韓國人都鐘意

  • but also all Koreans love it.

    大家都鐘意泡菜薄餅

  • They love kimchi pancake.

    通常,我哋唔係整呢樣份量

  • Usually, we don't make this amount,

    就係一大個碗,裝咗滿滿嘅泡菜

  • just a large big bowl and filled with kimchi.

    Okay,媽媽整緊,下一批,第三批又嚟緊喇

  • Okay, mum is making, next batch, third batch are coming

    我呢支係菜油,你哋可以用返你哋嘅

  • This is my vegetable oil but you guys can use

    葡萄籽油,粟米油,都可以

  • any grape seed oil or corn oil, too.

    如果要整韓國薄餅,要落好多油

  • When you make Korean pancake, add generous amount of oil,

    呢個係令薄餅脆嘅原因

  • that's a key point to make it crispy!

    我就加兩個湯匙嘅油

  • I'll add around 2 table spoons.

    我要整一塊好大嘅薄餅

  • I'll make a large size pancake.

    攤開大概12吋

  • Just spread this to 12 inch.

    (油煎緊)

  • (oil frying)

    如果你你素食者,就用蔬菜泡菜

  • If you are a vegetarian, make vegetarian kimchi

    然後就做呢樣!素菜薄餅

  • and then make this! so vegetarian pancake.

    你哋可以煮素泡菜薄餅

  • You guys can make vegetarian kimchi pancake.

    有個重點,係當你整緊韓國薄餅,

  • Important thing is when you make a Korean pancake,

    你個煎鍋要或鑊要唔黐底

  • your pan or skillet should be non-stick.

    如果佢黐底嘅話,就會激死你㗎喇!

  • If it's sticky, so frustrating!

    呢個係不沾煎鍋,我會將佢收埋喺

  • This non-stick pan, I always keep in the...hiding

    我嘅秘密地方。無時無刻我都要保養住

  • in my secret place. All the time I have to maintain to

    確保佢唔黐底

  • make it really non-stick.

    大約兩分鐘

  • So around 2 minutes,

    我要繼續煎到個底好脆

  • I'm going to cook until the bottom is crunchy.

    你需要呢個大鍋鏟

  • The you need this kind of a large spatula.

    推下佢,然後抬起佢

  • And push this and lift this,

    用呢樣鍋鏟就非常之容易

  • then easily you can use this.

    但對我嚟講呢,就甘反佢係再容易啲

  • But for me, just flipping is easier.

    你哋係屋企可以練習下㗎

  • You guys can practice at home.

    好喇,我依家要反佢喇

  • Okay, I'm going to flip this,

    (笑)睇下,脆脆,金黃色!

  • (laughing) Look at that! So crunchy and golden brown!

    由佢再煎多陣,然後我地先再甩下佢

  • Let it cook little bit and then we're going to shake this.

    睇到未?依家我可以甩到佢。再加多兩個湯匙既油

  • See? Now I can move it around. Add 2 tablespoons oil.

  • Two.

    甘前後一共係四個湯匙

  • So total 4 tablespoons oil.

    啲油應該要去到薄餅中間嘅

  • This oil should go to the middle.

    要點樣做呢?用你嘅鍋鏟

  • How can we do? Use your Spatula

    甘樣抬起薄餅

  • and just lift it.

    呢度都係甘樣

  • And this part, too.

    然後又甩甩佢

  • and then shake it.

  • in a University and then the daughter told her mom,

    "媽,我會返屋企,你可唔可以整泡菜薄餅俾我?"

  • "Mom, I'm going home. Can you make kimchi pancake for me?"

    阿媽緊係開心,佢之後就做左韓國菜擁?

  • Mom was so happy, she became a Korean food fan,

    就好似你哋!

  • just like you guys!

  • Shake it, shake it!

  • also you can eat it with rice.
