字幕列表 影片播放 列印所有字幕 列印翻譯字幕 列印英文字幕 (cheery music) 大家好 - Hi everybody. 今天我們做韩式拌冷麵(비빔냉면) Today we are going to make bibim-naengmyeon. 冰凉有嚼勁又辣的冷麵 Cold, spicy, chewy noodles. 是有嚼勁的麵 I said chewy. 上一集我們做了湯冷麵 Last time, we learned how to make mul-naegmyeon. 湯冷麵裡有冰涼的湯 Mul-naegmyeon is cold noodles with real icy, cold broth. 但我們今天做的是拌冷麵 But today we are going to learn bibim-naegmyeon. 你們知道的韓式拌飯(비빔밥) Bibim, you know that bibim, bibimbap, 비빔是拌的意思 bibim means mixed. 你可以用酸甜辣醬來拌麵 You can mix this with a really spicy sweet and sour sauce. 家家戶戶都有自己的拌麵醬 Every family and every restaurant has their own recipe 口味都不同 for this seasoning sauce. 今天你們要學我的拌麵醬 You will learn Maangchi's seasoning sauce. 我的書裡的有這個食譜 This is one of my cookbook recipes. 今天我就根據這個做法教你們 I just, I'm going to make that exactly follow my cookbook. 你們已經買了我的書的 So you guys already have my cookbook, 會覺得似曾相識 you will see: "Oh right, that way!" 沒有我書的人 可以在這裡學 You don't have my book: "Wa! (笑)咔嚓 咔嚓 咔嚓 (laughs) Snip, snip, snip. 冷麵 是乾的麵條 Naengmyeon, dried, dried noodles. 這麵條用小麥粉和蕎麥粉製成 This noodles made with wheat flour, and buckwheat flour 澱粉含量很足 and starch inside. 煮了以後 變得十分有嚼勁 When noodles are cooked, very chewy. 我上一集也是用一樣的麵條 I used last time, same noodles. 你看 You see? 這一種 This kind of noodles. 細細的麵條 All noodles are very thin. 這裡寫湯冷麵 是因為裡面 Mul-naengyeon but because, inside there are package. 有附湯包 Package inside liquid. 一二三四人份 One, two, three, four, four servings. 然後這是芥末籽油 辣的 And also this is mustard oil, spicy. 即使我們不做湯冷麵 不需要很多湯 So even though we don't use mul-naengyeon, lot of broth, 我們需要用至少一包 still we need one package at least. 會增加酸度和甜度 It has a really sweet and sour taste inside. 加兩杯水 冷水 Add two cups water, cold water. 這些下次用 我们现在用兩包 Then, this one later I'm going to use, two. 當你做拌冷麵時 第一件事 When you make bibim naengyeon, first thing you gotta do 就是做湯頭 is to make nice broth. 我們要把這湯放哪裡呢?
