"今天我要做特別的飯" Red color is wards off bad spirits. 紅色可以擋住邪氣 This is red beans. 這裏指的就是紅豆 It's also called Azuki beans. You can easily find this 紅豆又叫Azuki beans,即日本人叫的赤豆.在韓國超市,日式超市或中或超市, at a Korean store, Japanese store, or Chinese store, or even health food store. 和買健康食物的商店都會找到. These red beans are really dried hard. Each bean is like a small rock. 這些紅豆是很硬的,如一顆顆小石頭 When its cooked, it's soft and kind of a little nutty. 但當煮熟後就會變得很軟, Good resource of protein and starch and also vitamins. Vitamin B, there's a lot of lot of Vitamin B. 紅豆有很豐富的蛋白質,殿粉質和維他命.尤其很多的維他命B So it's good for your eyes, and good for your skin. 所以它對的眼晴和皮膚都很好. To make patbap, first thing we have to do is make it tender. 要煮紅豆飯,首先要令它變軟 Tender enough. Everybody has a different method how to make it tender. But I found out this method is perfect. 有很多不同的方便令紅豆變軟,但我發覺這個方法最完美 How to choose good red beans? 怎樣選紅豆? So buy this kind of bright red, and a little purple beans. 買光澤並帶點紫紅色的紅豆. Let's boil this. I'm going to use this half cup. 我準備煮半杯紅豆 Check out any dead beans are here. 記得檢查一下有沒有壞豆在其中 See? Really really pretty. 看這些紅豆都很美麗, I don't see any dead beans. Leftover beans you just seal this. 找不到半顆壞豆. 餘下的把它封好. Nicely. And you don't need to put this in the refrigerator! Just any place, cool place you can keep it. 放在陰涼處就可以了,不用放在雪櫃內. Any time you need red beans take it out and make this. 什麼時候再想用它,就拿出來,很方便. Or today I'm using a half cup, maybe you can use, "Oh, I like to make a lot!" and then you can freeze this after boiling. 今日我用半杯紅豆,如果你想煮多一點也可以,煮好後放冰格就行. And then I'm going to wash. 先清洗一下 Four cups of water I measured. 用四量杯水 And then I'm going to boil over medium high heat ten minutes. After that, I will just lower the heat 用中大火煮它十分鐘,然後就用很小的火, to really low, and fifty minutes. 煮它五十分鐘. Then perfect. Perfectly cooked. 這樣煮好來就會很完美 Perfectly cooked doesn't mean that it's mushy. What kind of side dishes she's eating together. 給你們看看Manngchi會用什麼伴菜來送紅豆飯. One side dish I'm making wanjajeon, pan fried pancake, meat pancake made with beef. 其中一碟伴菜是wanjajeo,香煎牛肉餅 And this is flour and this is egg mixture. 這裏有麵粉和蛋 So I'm going to make a small ball. 首先把免治牛肉揉成小球狀 (pot is rattling from boiling) (傳來鍋裏燒的沸騰的水聲) Like this. 就像這樣 (timer goes off) (計時器響起來) Ten minutes! 十分鐘了 Let's lower the heat. 現在就調至小火 I turned down the heat to very low. I don't make a lot amount, just a small amount. 不會一次做很大份量,每碟都是小份量, Sometimes five side dishes, seven side dishes, I make this. 有時五小碟伴菜,有的時候做七小碟伴菜. And then it takes at least one or two hours. 每次都弄要一,兩個小時. Nice. 令人滿意 Well done. This guy is first, very cooked. 熟透了,這塊最煎的,己煮熟了. You saw that really really easily you can make it, so gorgeous and pretty. 看,真的是很容易. 很漂亮~~ Ok, one side dish done! 好了,做好了一碟伴菜. Next side dish I prepared, mung bean sprouts and this is matchstick cucumbers I mixed with some salt. 下一道伴菜是綠荳芽和青瓜條. 我放了一點鹽. And squeezed out all the water, this is not much water here. So I chose doenjang-jjigae. 因為patbap就只是飯,所以我們會配湯, 今次我選了大醬湯. This one is very special. My friend, she's living in New York, and she visited Korea where her mom is living 這個很特別的,因為是我一個在紐約住的朋友, 她回韓國時她媽媽做給她的. And mom made this maesil, you know - plum. Maesil-jangajji. I like to taste today. maesil,就是醃梅, maesil-jangajji, 我要嘗一下. Sweet and sour and salty. 甜~酸~還有帶咸 It's a kind of pickle. 是其中一鹽漬菜 These two more side dishes, kimchi and kkaktugi. Kkakdugi is cubed radish kimchi. 還有兩種伴菜,辣泡菜和kkaktugi, kkaktugi是一種切成正方體的辣蘿蔔. (jazzy music) (爵士音樂) My timer is going to go off soon. I'm ready! 計時器快要響了, 我都準備好了. (timer goes off) Ok! Now it's ready! (計時器響起來) 好了,紅荳煮好了. Low heat, good. 小火 So red beans, it's like this. Still firm. 紅荳煮好就像這樣, 沒有煮溶的. We are going to use this red bean water when I make rice. 我們會用這些紅荳水煮飯. Short grain rice, just two cups. 兩杯短粒米 And let's wash. 先洗米 I rinsed this a couple of times until the water is clear. 過水好幾次, 直至看到水變清. Wash nicely. 好好地洗 And pour out water as much as you can. 把所有水倒出來 Instead of adding water, I will just add the read bean water. 用紅荳水代替水 I will wait until this red bean water cools down. If I put this hot water just right now, it may cook this rice. 要先等紅豆水降溫, 如果現在用熱的紅豆水, 米可能會被煮熟. One... 一 We need more. I will fill it up with water, cold water. 如紅豆水不足, 就用凍水加滿. And this is, two cups. 好了,兩杯. Half cup. 半杯. Add all the cooked red beans. 再加上煮好的紅豆. You guys know that when I make white fluffy rice I never use salt. 你們都知道我煮白飯時都不加鹽. Because rice should be bland so that it goes well with salty side dishes. 因為白飯配咸咸的伴菜最完美. Most cooked rice is bland, but this patbap is different. 不過紅豆飯就不同 I use a little bit salt. Half teaspoon salt. 我會用一小撮鹽, 半茶匙的鹽. And then cover this. 蓋上鍋蓋 And soak for thirty minutes. 浸30分鐘 (more jazzy music!) (爵士音樂) (alarm goes off) Thirty minutes passed. Now it's time to cook. (計時器響起) 30分鐘了, 現在可以煮啦. I will cook this ten minutes. After that I'm going to open this and stir this. 我會先煮10分鐘, 然後開蓋攪拌一下. And then turn down the heat to low. I can't wait to eat my food, I'm so hungry. (laughs) 跟著把火調小. 我好想吃啊~~很肚餓(笑聲) Ok my rice is, wow! Nice! 紅豆飯~嘩~很不錯 Beautiful red color rice. 好漂亮的紅色~ And then turn down the heat to low. 把火調到小火 And then I'm going to cook another ten minutes over low heat. 再煮它10分鐘 Then we are going to have fluffy rice. 很快就可以吃到蓬鬆鬆的飯. I made doenjang-jjigae here. 這裏有我煮的大醬湯 Tofu, onion, shrimp, potato. 有豆腐,洋蔥,蝦,土豆. Wow. Fluff the rice. 哇~飯好鬆啊 Very shiny and well done. 好光亮~熟透了 A bowl of patbap. 一碗紅豆飯 Doenjang-jjigae is boiling... 大醬湯都煮開了 So this is a kind of table setting. 大概就是這樣佈置餐桌 Rice and spoon and chopsticks and my side dishes. 飯,調羹和筷子, 還有伴菜. Side dishes like this. 伴菜就像這樣放 Look at that! This is my patbap table setting. 看看,紅豆飯的餐桌佈置~ Let me taste my patbap. 讓我嘗嘗這個飯 Cheers everybody! 大家乾杯~~ Mmmm! 嗯~~~~~~ Rice is very fluffy, beans are soft and tender and nutty, and also a little salty because we added a little salt. 飯真的很鬆,紅豆很軟,有堅果的感覺, 還有點點咸味~因為我們加了鹽麻. Byt itself I can eat it but we have to eat with delicious side dishes. 我可以只吃飯,不過有這麼美味的伴菜, 當然要配飯吃啦. Broth tastes good and potato makes it a little thickened. 很美味的湯, 土豆令湯濃一點. My winter kimchi. These days the taste is at the peak! Perfect time. 冬季泡菜,吃泡菜最好的時份, 完美~ Mmmm! 嗯~~~~~ Mm! 嗯~~~~~~ Spicy, crunchy, and pungent! So this patbap I can keep going on and on 辣,脆~我可以不停吃這個紅豆飯~ Instead of eating only one side dish, you have to eat a little bit of everything. 不要只吃一碟伴菜, 要每款都吃一點. The main dish is rice. Rice is very very important in Korean cuisine. 主菜的飯, 在韓國料理中飯是很主要的. So all these are side dishes, but all the nutrients are different. 雖然這些都只是伴菜, 佰是每種都有不同營養.
