This is the last episode of my special series 這是特別單元的最後一集 showing you how to shop in a Korean grocery store 教大家如何逛韓國超市 It's about frozen ingredients, dried fish, fermented seafood, and Korean kitchenware. 這次介紹冷凍食材、魚乾、醃漬海鮮和韓國廚具 Check out the other three episodes, too. 也請參閱前三集的影片 Yeah this is the frozen section. 這裡是冷凍食材區 I cannot explain to you all these things 我無法一一說明所有的食材 just some ingredients that you will have to use in Korean recipes 有些食材是在韓國料理中必需使用的 especially recipes I posted already. 特別是我所PO過的食譜 And this is... 這是 crab meat. 蟹味棒 Crab meat, it's made with fish and starch. 蟹味棒是用魚漿和澱粉所製作的 So it has nothing to do with real crab 這裡面沒有加入真的蟹肉 it's artificial crab. 這是人工蟹肉 but sometimes a very easy way you can make gimbap 有時可以很方便使用在紫菜捲上 because these are strips 因為它們是條狀 each one is wrapped in plastic and then you can just 每一根都是各別包裝 你只需要 heat it up in a pan or using a microwave oven 用平底鍋炒一炒或是用微波爐加熱 and then use as a filling. 當做紫菜捲的包料 We call this gemassal. 韓國話是「gemassal」 - Here's fish cake. 這是魚板 This fish cake sometimes looks like a finger. 有些魚板長的像手指 [laughs] And sometimes looks like a paper. (笑) 有些是薄片 像紙 Like this. fish cake. 像這樣 魚板 You can stir fry with soy sauce, sugar, and garlic 魚板可以用點醬油糖和蒜頭炒一炒 (辣炒魚板) and then really quickly you can make a side dish with this. 這樣就可以快速的製作一道小菜 Or sometimes you can make soup with this. 煮湯時也可以加魚板(魚板湯) Now this is anchovies! 這是鯷魚乾 All the Mr. Anchovies are here. 所有的鯷魚乾都在這裡 Dried seafood. 海鮮乾貨 Many different kinds of dried anchovies, by size. 有不同大小的鯷魚乾 This is large anchovies. 這是大的 Large dried anchovies. 大的鯷魚乾 [laughs] (笑) I gotta hurry up! 我需要加快腳步了 Because I already told this grocery store a certain time I have to finish, right? 因為我已經告知超市我預定的結束時間 So, see... 看這個 This is large dried anchovies. 這是大的鯷魚乾 You guys know, everybody knows, eh? 你們大家都知道了吧 So when I make stock I need this. 當我煮高湯時 我會用這個 Small dried anchovies, it's not going to be tasty. 小的鯷魚乾鮮味不夠 When I make stock I need these large dried anchovies. 我都是用大的鯷魚乾煮高湯 And then I have to get rid of the heads and intestines. 需要把魚頭和內臟去除 And then use this. 然後用來煮高湯 Remove head and intestines. 去除魚頭和內臟 And then dip in the gochujang. 沾點韓式辣椒醬 Where is my hot pepper paste? 我的辣椒醬在哪裡 Gochujang and eat. 沾點辣椒醬 With rice. 配飯一起吃 So that can be a good side dish. 這樣也一道美味的小菜 And this size is my favorite. 當我炒鯷魚乾時 When I stir fry this 我喜歡用這種大小的 (炒鯷魚乾) even my Western friends, when they come over to my house, they say: 當我外國友人來拜訪我時 "What is it?" 他們會問我"這是什麼?" "Oh this is dried anchovies, tiny anchovies." "這是鯷魚乾,迷你鯷魚" At least they don't see their eyes here! 至少他們看不出魚眼睛 [Readers laugh] So nobody is complaining. (大家笑) 這樣就沒人會抱怨了 [laughs] (笑) I will buy this. 我會買這包 And next, bugeochae. 再來是bugeochae Dried pollock. 鱈魚乾 With this you can make soup. 可以用這個來煮湯 It's Korean hangover cure soup. 這是韓國醒酒湯 Bugeoguk. It's very number one. Bugeoguk(鱈魚乾湯) 這是第一名的醒酒湯 "Last night I drank too much, oh my God, my headache!" "昨晚我喝太多了 天哪 頭好痛!" And then you make this soup with this 可以用鱈魚乾來煮醒酒湯 and then really your hangover is gone after this. 喝了這醒酒湯後宿醉就消失了 See? It looks like this. 鱈魚乾長這樣 Original fish looks like this. 完整的鱈魚乾是長這樣 This is a pollock. 這是鱈魚 Dried pollock. 鱈魚乾 Separate the flesh from bones and then 完整的鱈魚乾 把魚肉和魚骨分離 you will get these strips. 然後就是這種鱈魚條 So only dried flesh. 只有魚肉 You can eat it. 可以直接吃 I feel like eating now but I'm going to wait. [laughs] 超想直接吃的 但我需要等(笑) You can make soup or you can stir fry or you can mix with a seasoning sauce. 可以用鱈魚乾煮湯 或是用調味料炒一炒 Korean side dish you can make. 來煮道韓式小菜 It's bugeochae. 這是bugeochae(鱈魚乾) Bugeochae, name is shredded dried pollock. Bugeochae的名稱是手撕鱈魚乾 Oh my God, I found this fermented anchovies! 天啊! 我找到這種醃漬鯷魚 I just used to make it at home when I lived in Korea 以前我住韓國 我會製作魚醬 around springtime, in May, is anchovy season 五月 春天是鯷魚的產季 So really fresh anchovies are sold everywhere 到處都在賣新鮮的鯷魚 and I used to by a huge, huge box 我都會買超大一箱鯷魚 and then I made it mixed with a lot of salt. 然後用大量的鹽來醃漬新鮮鯷魚 That's it! 就這樣 Put it in an earthenware crock. 放入陶瓷缸裡 And then several months later, it looks like this. 等待幾個月後就像這樣 And then I made all kinds of things: green onion kimchi, and kimchi 然後用它來煮任何料理 像是綠蔥泡菜和大白菜泡菜 I add everywhere! 我都會加魚醬 I couldn't find this kind of real fermented fish 之前我都找不到這種魚醬 But today, the first time I came to this grocery store 今天我是第一次來這間超市 I found this. 我找到了 Wow, amazing. I'm going to buy this one. Imported from Korea. 天哪 我要買這罐 是從韓國進口的 And this is saeujeot, salty fermented shrimp. 這是saeujeot 蝦醬 When I make kimchi I use this. 做泡菜時我都會加這個 Fermented fish. Shrimp and anchovies. 魚醬 蝦醬 鯷魚醬 And these are rice cakes 這些都是年糕 For tteokbokki, spicy rice cake. Famous spicy rice cake! tteokbokki 辣炒年糕 大家都知道的辣炒年糕 You can make it at home, you buy this ingredient 可以自己在家煮辣炒年糕 買些年糕 with some hot pepper paste and add some anchovy stock 用點辣椒醬加點鯷魚高湯 然後拌炒它 and then stir fry - oh delicious, delicious tteokbokki you can make it. 然後你就會煮出超級好吃的辣炒年糕 So this is cylinder shaped. Cylinder shaped for tteokbokki. 辣炒年糕是用圓條狀的年糕 And sometimes it's sold as small, tiny balls like this. 有時也有賣小顆的 像小球 Same. So you can use this one or this one. 這兩種都可以 This is oval shaped sliced rice cake. 這是片狀(寧波年糕) When can you use? You can make rice cake soup with this. 可以用它來煮年糕湯 So rice cake soup is called tteokguk. 年糕湯叫做tteokguk So you can pick it up and then use half amount 取一半出來 for maybe two people or three people. 二人份或三人份的 And then leftovers keep in the freezer. 其他的綁緊放入冷凍 In the freezer up to one month. No problem. 冷凍的話 可冰一個月以上 沒問題的 Danmuji. Danmuji, yellow pickled radish. Danmuji Danmuji 黃蘿蔔乾 When can I use? 什麼時候可以用它呢 You can make seaweed rice rolls, gimbap. 可以做紫菜捲 gimbap When you make gimbap, I always use this 我一定會用它來製作紫菜捲 And sometimes they sell this way, as a whole radish - this is a daikon radish 有賣這種整根蘿蔔 這是白蘿蔔 And also pre-cut for making gimbap easily. 也有已經切片的 方便用來做紫菜捲 These are tofu, medium firm, and soft tofu. 這是豆腐 板豆腐(偏硬)和嫩豆腐 And also firm tofu. 板豆腐 So I usually use medium firm when I make pan fried tofu. 我通常用板豆腐(偏硬)來煎豆腐 But you can use firm. 你也可以用板豆腐 When you make soup or stew, you like to enjoy a kind of softness 煮湯或燉湯時 選嫩一點的 and then you can use soft tofu. 可以用嫩豆腐 I'm looking for sundubu... 我在找sundubu Where is sundubu? sundubu在哪裡 Oh yeah! 噢耶! Here you go! [laughs] 在這裡(笑) It says "Soon Tofu." 這叫做"Soon Tofu" Soon I will be back! "我馬上回來" It says! [readers laugh] S-O-O-N. 上面寫的(大家笑) S-O-O-N Soon tofu! Very soft tofu for when you make spicy soft tofu stew Soon tofu是種非常軟嫩的豆腐 **口感味道像豆花** 用它煮辣嫩豆腐鍋 Sundubu-jjiage. Sundubu-jjiage (辣嫩豆腐鍋) You can make really nice sundubu-jjigae at home! 在家也可以煮出美味的辣嫩豆腐鍋 So how you use? You just cut it with a knife, in half. 要怎麼用呢 先用刀對半刀 And just squeeze out. 再來用擠的 And then go into your delicious boiling stock 擠到滾燙的高湯裡 and then make sundubu-jjigae, easy. 最後煮成嫩豆腐鍋 簡單吧 How much is it? $1.29, so cheap. 這多少錢? 台幣42元 很便宜的 I just walked through all this grocery store, but there are tons of more things that I like to introduce you to 我大約逛過這間超市 還有非常多的食材想介紹給大家 But I like to focus on cooking ingredients 這次的重點在料理食材 Essential cooking ingredients this time. 韓國料理的必需食材 But I'm going to introduce you to just a little bit of kitchenware 但我還想介紹一些廚具給大家 You guys are interested in earthenware crocks or something like that 像是大家有興趣的陶瓷缸 This store has, I like to show you. 這裡有賣 我來向大家介紹 Earthenware pot. It's ttukbaegi, it's called ttukbaegi 陶鍋 這叫做ttukbaegi You see? Here. 在這裡 I make all kinds of doenjang-jjigae, and all the time I make this. 我煮各種大醬湯都是用陶鍋 And this price is only $8.99, this thing. 陶鍋只要台幣288元 You can put it on any stove. Gas stove or electric stove. 可適用在各式爐子 瓦斯爐或是電磁爐 And just boil and sizzling. 湯滾起來時 If you need a lid, just use any lid from any of your pots. 需要蓋子 可用其他的鍋蓋代替 So this is ttukbaegi saucer, like this. 這是陶鍋墊 像這樣用 Yeah. [laughs] (笑) And also this is for soup. All made with earth. 這也是湯碗 用陶土製作的 You can put this on fire directly. Really hot soup I put this here. 可以直接放在爐子上煮 或是滾燙熱湯倒進來 And then serve. 直接上桌 Earthenware crocks. 陶瓷缸 I have a bunch of these guys at home. 我家有一堆陶瓷缸 I make all kinds of things, fermented fish sauce, doenjang, gochujang, I use this. 我用陶瓷缸來醃魚醬 大醬 辣椒醬 Let's see how much is it? Wow, thirty-three dollars. 來看看多少錢 哇嗚 台幣1100元 Kind of expensive but if you have one it will be good at home. 小貴 不過有個在家裝飾也不錯 Also people think: "Oh cool, what is it?" 有人會想:"好酷哦 這是什麼?" "Korean earthenware crock!" "韓國陶瓷缸" So Koreans love to enjoy grilled pork belly at home. 韓國人都愛在家烤豬五花 So you can use this when you have a samgyeopsal, pork belly or Korean barbecue party. samgyeopsal(烤豬五花) 烤肉聚餐都可以用卡式爐 You can buy this butane gas here. 可以在這裡買到罐裝瓦斯 Come here!
