字幕列表 影片播放 列印所有字幕 列印翻譯字幕 列印英文字幕 Hey, guys. 嗨,大家好 So, I made a ramen video a few years ago. 幾年前我做了一部拉麵的影片 But this time I want to put a bit more effort and time into making it better. 但這次我想再多花點時間 把它做得更好 Ramen is one of the most popular Japanese fast foods, although it's not fast to cook. 拉麵在日本是非常受歡迎的"速食" 即便它的製作過程一點也不快速 This recipe took me two days to make, 這份食譜總共花了我兩天的製做 but it was definitely worth it. 但是絕對值得 It's probably hard to get all the ingredients I used for this recipe if you're not living in Japan, 如果你不住日本的話 這份食譜裡有些材料你可能會很難買得到 but you can easily make some of the delicious toppings I made, so please, give it a try! 但是你可以輕鬆的做出影片裡這些美味的配料 所以 試試看吧 Alright, let's start cooking! 好 開始做吧 Let's make toppings first. 先來做配料 I'm gonna start with pork. 先從豬肉開始 Rub in salt to season. 在肉表面擦上鹽巴 Then, slowly sear the outside of the pork. 然後入鍋慢慢封煎豬肉的每一面 Now, let's make the sauce for the pork and boiled eggs. 現在來做豬肉跟糖心蛋的醃料 Get the green part of the green onion, 切下蔥綠 a few slices of ginger, 幾片薑 and crush the garlic. 壓碎大蒜 Add saké, mirin, soy sauce, sugar, salt in a pot and heat it up on low heat. 在鍋中加入 清酒 味霖 醬油 鹽和糖 然後開小火 Turn off the burner before it boils. 煮沸前就可以關火了 Now, wrap the pork with a paper towel, and put everything in a ziploc bag. 用廚房紙巾把煎好的豬肉包起來 把豬肉、蔥、薑、 蒜和一半的醬汁倒入密封袋 Then, get rid of the air inside the bag. Using a bowl of water makes this process easy. 把密封袋裡的空氣擠出來 有一盆水會很好操作 Then, place it in a rice cooker, and add boiled water. 把豬肉放進電飯鍋裡 加入熱水 Press the 'keep warm button', and it'll be done cooking in about 3-4 hours. 按下保溫鍵 3~4小時後就完成了 Then, keep it in a fridge for half a day. 放入冷藏庫半天 Now, let's make half-boiled eggs. (Soft-boiled/Ajitama) 現在來做糖心蛋 Making a tiny hole at the bottom of the eggs prevents it from cracking. 在蛋的鈍端戳出一個小洞 可以預防蛋殼破裂 Boil the eggs for 6 minutes and a half. 滾水煮六分半鐘 Take the eggs out and cool them down. 把蛋取出 冰鎮 When they're cooled down, get rid of the shells. 冷卻後把蛋殼剝掉 If you have a container like this, put the egg in, cover them with water, and shake it. 如果你也有這種容器 把蛋放進去 加入水 然後搖一搖 Place eggs in tupperware, and add equal parts of water and sauce. 把蛋放進保鮮罐裡加入相同分量的醬汁和水 Then, cover it with a paper towel and keep it in the fridge for half a day as well. 用張廚房紙巾蓋上去 放入冷藏庫半天 when the pork is done, slice it as thin or as thick as you want. 豬肉冷卻完成後 切成你喜歡的厚度 Now, let's make the soup. 現再來做湯底 Prepare the soup stuff like this. 要準備的東西有:昆布醬油、昆布 乾香菇(用冷水泡開) 小魚干和柴魚(用熱水泡開) Next, add green onion, ginger slices, chicken bones and wings in boiled water, and boil them for a minute to get rid of smell. 接著把蔥綠 薑片 雞胸骨跟雞翅放入滾水中 川燙去腥一分鐘 記得撈去浮沫 Place them in cold water and chop the bones into chunks. 沖去浮沫 把雞骨剁成塊 Put the bones and chicken wings in a pot and cook it on very low heat for an hour. 雞翅跟雞骨重新入鍋以小火燉煮一小時 Let's make clam soup at the same time. 同時來處理蛤蠣高湯 Before cooking the clams, get rid of sand in the clams by adding 3% salt water and wait for half a day. 將蛤蠣以3%濃度的鹽水浸泡半天使其吐砂 Boil the clams with saké and kombu for thirty minutes on low heat. 再將蛤蠣和清酒、昆布小火燉煮30分鐘 Skim off scum while boiling. 途中也要撈去浮沫 Cut off the skin of chicken and fry it on low heat until it becomes crispy. 取下雞皮 以小火慢煎 直至變脆 I'll use chicken oil for the soup, and chicken skin for the topping later. 煎出的雞油會用在湯底 脆脆的雞皮則是配料 Let's make another topping: 在來做剩下的配料 This time I'll cut off the white part of the green onion, cut off the core, and slice it thinly. 這次取蔥白的部分 去掉芯 切成細絲 Soak it in water for 5 minutes. 泡水5分鐘 Now, let's blend all the soup. 現在來混和高湯 The blend ratio is completely up to you. 高湯的比例完全取決在你的口味 For example, if you want the soup to be a little more fishy, then add more bonito stock. 例如你喜歡魚介類的湯底 那柴魚高湯的比例就可以多一點 You can see my ratio in the description box, but you can adjust however you want, and make your own soup. 底下連結欄內有我喜歡的比例 你也可以依照自己的喜好 做出屬於你的湯底 When the soup is done, add soy sauce with kombu and chicken oil in the ramen bowl first. 當湯煮好了 先把昆布醬油 昆布水 和雞油到入拉麵碗裡 Let's prepare toppings. 來準備配料 Scorch the pork slices. 把豬肉炙燒一下 Cut the egg in half. 把糖心蛋切半 Pour soup in the bowl. 把湯沖入碗中 Finally, boil the noodle, 最後 煮麵 strain it well, 瀝乾 and finish. 完成!!
