When I started learning about nutrition -

Corporations cook very differently than people do.
食品業者和一般人料理食物的方式迥異
They use vast amounts of salt, fat and sugar.
他們使用大量鹽巴、脂肪和糖
Much more than you would ever use in your own cooking.
用量之多遠超過你煮菜所放的份量
The reason they do that is those are three incredibly attractive
這麼做的理由是調味料很誘人
and incredibly cheap ingredients.
而且超級便宜
And when they're layered properly,
當它們層層鋪在食物上
as in a chip or pastries and forms of junk food,
好比說添加在洋芋片、餅乾還是其他垃圾食物
they're incredibly addictive, they really press our buttons.
會讓人上癮,想一口接一口
They activate our dopamine network, our cravings.
調味料會啟動我們腦內的多巴胺、我們的渴望
In fact, they don't talk about "addiction" in the food industry,
事實上,食品業者不講「上癮」
even though they traffic in addiction.
儘管販售手法讓人上癮
They talk about "cravability". It's the same thing.
他們會說「滿足心中渴望」,其實都一樣
"Snackability" is another term they use. It's a lovely word!
另一個說法是「百吃不膩」,真是好詞!
The last point about corporate cooking
最後一點
that's important to understand
這點非常重要
is they cook different stuff than you do at home.
他們使用的材料和你在家做的不同
In general, they don't cook that well,
一般來說,食品業者煮的並不好吃
but things like chips they cook incredibly well.
但像是洋芋片之類的食物,他們就處理的非常好
Here's a classic food that if you make it yourself...
舉一個經典料理當例子
If you've ever made French fries, you have to wash the potatoes,
如果你想自製炸薯條,首先必須清洗馬鈴薯
you have to peel the potatoes, slice the potatoes,

fry them in a LOT of oil.
炸薯條的油量必須多到不行
You have to spatter your entire stove top.

You have to clean up and then you have a pot of oil to get rid of.

It's really difficult and it's a pain.

They're wonderful, but it's a pain.
雖然很好吃卻很累人
If you make them yourself, you'll only eat them every six weeks,
自己炸的話,每隔6週才會想吃一次
two months, cos it's too much work.
或兩個月一次,因為真的很費功夫
But when you let corporations cook for you,
但當你交給食品業者
it's so simple and so inexpensive and they're really good,
炸薯條變得簡單便宜又美味
that you'll have them twice a day, as many people in America do.
讓你每兩天就吃一次,就像在美國的多數人一樣
The kinds of foods you end up with
最後這類食物
are labor-intensive foods and desserts.
就成為勞力密集下製作的食物和甜點
These special-occasion foods become everyday foods
不常吃的食物變成每天可以吃到
when we let industry cook for us.
這就是放任食品業者幫我們料理的結果
Eat anything you want, just cook it yourself.
所以要吃什麼,還是自己煮吧!
