I know, all of you guys are passionate cooks. 我知道你們都很愛烹飪 Probably you are going to make something, 你們大概都正要弄點什麼 but it's very hot, hot day. 但今天天氣非常熱 Probably most of you guys are interested 你們大概都想要學一些 in learning something really cool, 非常涼快的料理 refreshing summer side dish. 一些清爽的夏天菜 Today I prepare the recipe for cold, 今天我準備了一道菜 cold icy seaweed salad, Miyeok-muchim. 非常冰的海帶沙拉,Miyeok-muchim Miyeok is a seaweed. Miyeok 即海帶 I don't want to use the seaweed. 我很想要用海帶 "Weed!" Weed sounds like a kind of a not food, it's not edible. 海帶這個名字聽起來不像食物 I try to change the name "seaweed," 我試著把海帶 as a "sea vegetable," "sea plant," but I gave up. 改成「海菜」、「海洋植物」但我放棄了 Everybody calls it seaweed, so no choice 每一個人都叫它海帶,別無他選 but to call this seaweed! (laughs) 所以就叫它海帶囉 There are so many seaweed cooking ingredients 海帶分很多種 in Korean cuisine, you know that. 在韓國料理裡 All the names are different. 不同海帶名字也不一樣 This is Miyeok. 這個是Miyeok Miyeok, I will show you. Miyeok,看 Smells like already ocean. 聞起來有海味 This is really dried seaweed. 這種是非常乾的海帶 We have to soak in cold water. 我們要把它浸泡到水裡 Let's measure one ounce, around 30 grams. 我們來量個一盎司,約三十克 This seaweed is also called Wakame in Japanese. 這海帶在日本叫做Wakame In Korean, Miyeok. 韓語叫Miyeok Cold water. 冷水 I'm going to soak this 30 minutes. 我要來浸泡個三十分鐘 30 minutes after, this guy's going to be really expanding. 三十分鐘後,這傢伙會膨脹 It'll look like real seaweed growing in the ocean. 就像海洋裡生長的海草 So 30 minutes past and then our seaweed is like this. 三十分鐘後我們的海帶長這樣 So expanded, beautiful. 膨脹了,很美 Look at this! 看! Look at that. (laughs) 看看這個! It's like really in the ocean it's growing, oo! 真的像在海裡一樣 Wow! (laughs) 哇! Almost it covers my face! 差點能蓋住我的臉 Dried Miyeok should be good quality, 乾的Miyeok品質要好 so then when it's soaked it's really soft and green color 使它能在浸泡後變軟變綠 and pretty and large, large leaves. 變得又漂亮又大片 I'm going to post this photo of what which brand is that. 我會拍照把海帶的品牌發上網 I'm not working for that brand company 我不是替這個海帶產商賣廣告 but I have been using miyeok from here and there, 但我一直都用它的海帶 and I think that's the best brand. 我覺得它是最好的 Check out the recipe, I'll just post a photo. 點看食譜,我會放一張照片 Then we are going to blanch this. 然後我們來燙一下海帶 Some salt make it more green color. 鹽巴能讓海帶變綠 Add this here. 加在這兒 And only 30 seconds we are going to blanch. 我們只需要燙個三十秒 Really beautiful green color. 很漂亮的綠色 Rinse this in the cold running 用冷的自來水沖一下海帶 water until all this gets cold. 讓他變涼 These days you guys go to Korean grocery store 這幾天去韓國雜貨店 you see there's sometimes like a seaweed, 你們有時候可以看到 seaweed salad that they sell in the package, expensive. 包裝好的海帶沙拉,那個很貴 You don't have to do that from now. 從今天起你不用再去買那個了 You just make this, buy real ingredients, the miyeok, 你可以自己弄,買真的海帶 and make your own and cheap and more delicious. 自己弄一個便宜一點、好吃一點的 So Mmiyeok is well blanched and then that's it. 川燙後的海帶是這個樣子 And we are going to just mix this with sauce. 我們來把它拌一下醬 Let's make really delicious my sauce. 來做我們美味的醬吧 You can use white onion or yellow onion. 你可以用白洋蔥或者黃洋蔥 This is around one ounce, 30 grams. 這裡差不多一盎司,三十克 And then slice it thinly. 切薄片 And then two cloves of garlic, minced. 拍兩顆蒜頭 This large bowl, I'm going to add this. 把材料加到大盆子裡 This a jinganjang, dark soy sauce, quarter cup. 這是jinganjang,濃醬油,1/4杯 White distilled vinegar, quarter cup. 白醋1/4杯 We need something sweet stuff, I will use honey. 我們要一點甜味,加點蜂蜜 But you guys can use either sugar or other sweetener. 但你們也可以用砂糖或者糖精 Okay, so two tablespoons, let's use. 好,放兩湯匙 One, two. 一、二 Then we're gonna mix this guy. 然後我們來攪拌一下 And this is my rice scoop. 這是我的飯勺 I really love this when I mix this 我很喜歡用它來攪拌 because it's make with plastic. 因為它是塑膠的 This rice scoop is perfect to mix this. 這個飯勺用來攪拌 Wow, this smells a little sweet, sour and salty, I love this. 哇,這聞起來有點甜、酸、鹹,我喜歡 Mmm, I love it. 我很喜歡 Let's add this miyeok. 加入海帶 These guys are so large. 發得很大 We have to squeeze it out and cut it into bite size. 我們要擠出水來,切成小塊 Cut it around one inch size like this. 像這樣切成一吋的大小 And then opposite direction, like this a couple of times. 然後從另外一個方向再切幾遍 So this is all bite size pieces. 現在都變小塊了 And then, let's add here. 然後把它加進去 Look at this, a lot amount. 看,量很多 Wow, smells so good, I love this smell. 哇,真香,我喜歡這味道 My mouth is watering because I know 我垂涎三尺,因為我知道 exactly the taste, what it tastes like. 成果的味道 Usually I serve this right away with rice. 我大多用這個配飯 But sometimes when I make a lot amount, 但有時候做的量很多的話 you can refrigerate up to one week. 可以放冰箱放一個禮拜 No problem in the refrigerator. 放冰箱沒關係 You can make this in advance. 你可以預先做這個菜 In that case, keep in the glass container. 先把它用玻璃容器裝好 So I'm going to keep this in the refrigerator 我要把它放冰箱了 at least for 30 minutes until this really gets cold. 最少放三十分鐘,讓它冷卻 I'm going to eat this as a side dish 我會把它當作小菜吃 with my rice and other side dishes. 配上飯跟其他小菜 Today I made some special galbi. 今天我做了點牛小排 So galbi and miyeok-muchim and rice and kimchi. 所以我們有牛小排、海帶沙拉、飯跟泡菜 That's perfect Korean meal. 一頓完美的韓國大餐 Sesame seeds, around one table spoon. 芝麻大概一湯匙 Sesame seeds I will crush, just half crush, not too finely. 我會把芝麻弄碎,半碎就好,不用太碎 Only a couple of times I crushed, that's enough. 壓幾次就好,夠了 My galbi, ready. 我的牛小排好了 I'm going to bring my cold miyeok-muchim. 我去拿我的冷海帶沙拉 I'm going to shave some of my ice to make it really cold. 我會刨一點冰,讓沙拉變更冷 This ice. 這塊冰 And then make ice. 然後來刨一下 When I made patbingsu video, I used the same machine. 我在我的patbingsu影片也是用這台機器 If you don't have ice shaver, use just ice cube, 如果你沒有刨冰機的話,用冰塊 several ice cubes just before serving. 在端出去之前加幾塊冰塊 Add sesame seeds, that's it. 加入芝麻,好了 This is my summer time meal. 這就是我夏天的一頓飯 Today is a special galbi, and kimchi, 今天有牛小排,有泡菜 and this is miyeok-muchim. 還有這個是海帶沙拉 Let's eat! 來吃吧! My water. 我的水 Prepare small bowl so that every individual 預備一個小碗 can scoop this with ladle and then eat it. 讓每一個人都能盛一點來吃 But, I can just eat it. 但我可以直接吃 Soup first. 先來點湯 Ah! 啊! Wow, so cold, mmm! 哇,好冰! Yummy. 好吃 Mmm. 嗯 Sweet, sour, crispy, crunchy, a little slippery 甜、酸、脆,帶點滑口 inside of my mouth and with lots of miyeok 一口吃掉很多海帶 Seaweed flavor, like ocean smell. 海帶帶點海洋的味道 Awesome, I like to eat more. 好棒,我在多吃點 This time, a lot. 這次多夾一點 Mmm! 嗯! One piece of cooked galbi, 來一塊牛小排 and ssamjang or gochujang, like this. 加ssamjang 或辣椒醬,像這樣 Delicious. 好吃 Sometimes when you eat galbi even though 有時候你吃牛小排 this is not a galbi video, I'm showing you. 雖然這不是牛小排的影片,但我來示範 Sometimes when you eat galbi, I just pick it up 有時候我吃牛小排,我會直接用手 like this and eat like this. 像這樣子吃 Mmm! 嗯! Only just little bones. 骨頭小小的 In L.A. galbi there are three or four bones here.
