  • No lie. This has been my first time having Asian food in Charlotte ever.

  • Jeremy, you were saying growing up... you and your family how to name for this? [What did your parents call this food?]

  • My mom and dad will call it fake Chinese food. They get really upset if I go like Panda Express or something like that.

    我的父母都叫這種料理「偽中餐」。假如他們知道我去熊貓快餐 (Panda Express, 美國的中式快餐店) 之類的地方,便會感到不爽。

  • Hey, sometimes you gotta have some of that! Obviously we ate authentic food the majority of time.

  • Everybody go around the table and talk about what caught your eye immediately. [What dish caught your eye?]

  • Alright alright, first of all... first of all... the chicken wing, authentic Chinese are not.

    對我來說應該是炸雞翅,不過它並不是正宗的中華料理。

  • Yeah! You like it, don't you?

  • I'll say for me first, and I... what you have to get was the orange chicken.

    對我來說的話,一定要吃的就是橙香雞丁了。

  • Yup, yup! You always have to get like either orange chicken, sesame chicken, sweet and sour chicken if you going for American Chinese food.

    沒錯!來美式中華料理餐館你一定要點橙香雞丁、芝麻雞丁、或是糖醋雞丁三道菜之一!

  • I was always a lo-mein guy over fried rice guy.

    比起炒飯,我一直都比較喜歡拌麵。

  • And I decided to go a little bit different.

    但今天我決定嚐點不一樣的。

  • You know, obviously during seasons so I don't want just eat crazy, so I got some tofu, some eggplants, you know, some veggies, trying to even out.

    你也知道,在賽季時我不會瘋狂地吃,所以我今天點了一些豆腐、茄子和一些蔬菜,來均衡一下。

  • Kind of a compromise. You're kind of rational.

    做出了點妥協,你還蠻理性的嘛!

  • But if it's a summer time and I don't... and I'm like really trying get after it and not eat healthy, I don't know... if this will be on my plate.

    但如果是在夏季休息,我想放縱地吃不健康食物的話,我就不知道這些東西會不會在我的盤子裡了。

  • I know you got a veggie plate, but that is a pretty greasy veggie plate.

  • Of course, I got this house special fried rice. Originally I was just getting chicken fried rice... yeah the shrimps.

  • I feel like... Jeremy, a lot of people... like, a lot of Asian American still can't get over the fact. They're like this is not authentic Chinese food, and because a lot... it's been used to make fun of lot of us a lot.

    書豪,我覺得很多亞裔美國人還是無法接受事實,總是在說這些不是道地的中華料理,而我們也常常因此而被嘲笑。

  • Oh yeah yeah! I know what Chinese food I eat. You know bla bla bla...

  • As young asian american, we got teased about it so much.

    身為年輕的亞裔美國人,我們常常被用這個話題開玩笑。

  • So we kind of push back on this food, but if you can just release yourself from that and just eat it. It's pretty good!

    所以我們有點抗拒這樣的偽中餐,但假如你單純放輕鬆地吃,這些料理其實嚐起來都蠻美味的!

  • I've told my parents like... sometimes I just prefer this.

    我有跟我父母說過,我其實有的時候比較喜歡這種料理

  • It's a different taste...you know... like authentic... Obviously if I have to choose one for rest of my life everyday, I'll choose authentic.

    但這跟道地的中華料理相比,味道不太一樣。當然如果我的餘生只能選一種的話,我還是會選正宗的中華料理。

  • But every once in a while, it's okay to have this. Like you say, it's actually really good if you wasn't like... you know labeled as "fake Chinese food". It would still be really good.

    但偶爾吃吃這樣的菜也是沒什麼不好的。如你所說,假如不要把它們貼上「偽中餐」的標籤,這些菜其實真的滿好吃的,

  • You know what it is, man.

  • People are getting attached to the meaning of it... rather than the taste.

    人們太過於在意食物背後的意義,而不是實際的味道。

  • Andrew has some Chinese characteristics but his Chinese is not that good so he's like panda express.

  • And because my Chinese is a little bit better, maybe I'll be like P.F. Chang's.

    而我因為我中文比較好,所以我比較像是「P.F. Chang's」(一家美國的亞洲與中華料理連鎖餐廳) 這種比較高級的餐廳。

  • That's a thing, my teammates are always like, P.F. Chang's. Let's go to P.F. Chang's Chinese food.

    這讓我想到,我的隊友總會向這樣:P.F. Chang's。我們去 P.F. Chang's 吃中華料理吧!

  • But I'm like P.F. Chang is good! Don't get me wrong, but I might not take my parents to P.F. Chang's. That would be offensive to them.

    不要誤會,我其實覺得 P.F. Chang's 是還不錯,但我應該還是不會帶我的父母到 P.F. Chang's,不然大概會惹怒他們。

  • Okay ,so, right now we're just gonna explain some of the dishes.

    好,現在我們要開始解釋我們都點了些什麼菜。

  • This is the sautéed green beans. This is called 四季豆.

    這道是乾煸四季豆。這種豆子叫四季豆。

  • I like how they... they've been stirred fried to the point where they're kind of dry.

    我喜歡這些豆子乾炒後有點乾乾的口感。

  • That's when you know they're good. Sometimes you get the joints, they are too ,like, fresh and like, water sauce.

    看乾乾的四季豆就知道這盤肯定好吃。有時在外面會吃到豆節明顯太新鮮,或者說太青翠的。

  • You gotta get the wok hot.

    在炒的時候鍋子的溫度必須再熱一點。

  • This is orange chicken, the... I don't even know if there's a word for this orange chicken.

    這道叫作橙香雞丁,我甚至不知道這道料理的中文要怎麼說。

  • Cause I... 橙雞... but they don't even have them, I don't think it's a real dish.

    橙雞... 但好像沒人這樣說,我想這不是到正宗的中華料理。

  • Look at this though! The orange peel! Right in here!

    可是看看這個醬汁,還有這個真材實料的橘子皮!就在這裡!

  • I don't know how often I see that.

    我幾乎沒看到這麼真材實料的。

  • Must I say... the Taipei Express is delivering on the American Chinese food. This is A class. [Top notch American Chinese food]

    我必須要說,這間「台北快餐」提供的美式中華料理可說是頂級水準。[頂級美式中華料理]

  • No lie! I'm not just saying that for the camera! It is!

    童叟無欺!我可不是因為正在錄影才這樣說!是真的很棒!

  • These are the eggplants in garlic sauce.

    這道是蒜香茄子。

  • They actually did it pretty authentic in terms of a lot of places still have like a bottom layer drenched in the sauce, and then the upper layer won't be as much.

    他們把這道菜煮得相當道地!你可以看到底層的茄子浸泡在濃濃的醬汁裡,但是上層的茄子的醬汁比較少。

  • So depends on what you're looking for. You want more flavor, a little more unhealthy, you go to the bottom.

    所以看你喜歡什麼樣的味道。如果喜歡重口味、較不健康一點,你可以把茄子沾底部的醬汁一起吃。

  • You want to keep it clean, stay on the top.

    如果你喜歡吃比較原味的茄子,就不要沾下面的醬。

  • One thing that I love about eggplants is gotta be pretty soft which these are, so this is a good dish!

    我喜歡煮得非常軟的茄子,而這盤煮得非常的軟爛,因此深得我心!

  • I got the tofu. Black bean sauce.

    我點了豆腐佐豆豉醬。

  • This is the in-season special, right? Yeah!

    這是當季限定菜餚對吧?沒錯!

  • It's not deep fried. It's stirred fried tofu and one thing about it is, it should be like break really easily.

    這道豆腐不是油炸而是拌炒的,所以豆腐應該要很容易碎掉才對。

  • You're doing the break test right here.

    你正在做碎豆腐測試。

  • So yeah, I mean, it could be a little softer.

    所以沒錯,我覺得它再軟一點會更好。

  • Yo, that black bean sauce is strong... it's strong.

    豆豉味道很重,真的很種。

  • it's good though. I like it!

  • I want to talk real quickly about these sa cha shrimps.

    我想要快速地評論一下這些沙茶蝦。

  • Have you guys had it yet? Tell the people really quickly about sa cha as a sauce.

  • You know, sometimes it's a good sauce for like hot pot or something like that.

  • But that was really good. I like that!

  • Maybe it was partly our fault, but this is a little too much broccoli in there! I mean a little more shrimps in there.

  • I am at an American Chinese spot in Charlotte, North Carolina and I'm eating Chinese food I've never had before.

  • So this is the mu gu gai pan. The water chestnut, the peas, and that sliced carrots are the staple of American Chinese food. Um, oh my god.

    這個是蘑菇雞片。荸薺、青豆、紅蘿蔔片,全都是美式中華料理中常出現的固定班底!噢,我的天啊。

  • What you will see in American Chinese food too... (You'll) see a lot of these baby corns.

    還有一種在美式中華料理中常見的蔬菜就是... 你會看到一堆這種玉米筍。

  • Shout out to baby corn, man.

    玉米筍太讚了,兄弟。

  • Baby corn is more authentic than baby carrots.

    玉米筍比小紅蘿蔔還要正宗得多。

  • Cause baby carrots are just shaved down into that shape.

    因為小紅蘿蔔只是被削成那個形狀而已。

  • My whole perspective on carrots has been blown. This is ridiculous.

    我對紅蘿蔔既有的舊觀念已經瓦解了。太誇張了吧。

  • The worst is when the orange chicken and the sesame chicken tastes the same.

    最糟的狀況就是,當橙汁雞丁和芝麻雞丁吃起來味道是一樣的時候。

  • That's when... that's when... that's when it's all bad.

  • When it comes to fried rice, I'm not gonna lie.

  • Any rice with chopsticks is like, so frustrating.

  • Cause like this fried rice, it doesn't clump together. Yeah! It's all loose.

  • So what I'll do is, I'll just bite a corner off and let the air out.

  • Authentic what's gonna happened, you have all this juice inside so you have to make sure you bite the top and let it sit like that. If you lean it, all the juice is coming running out.
