  • Hey guys. Hope you're well. Okay. Today

  • is a great day!

  • Because it's my first time making a non-alcoholic drink

  • on Drinks Tube!

  • Wooo

  • Cue the applause.

  • Okay. So look here's the thing. Actually I do make a lot of non-alcoholic

  • cocktails all the time, because as a parent

  • I'm always wanting to get tasty stuff

  • into my kids that's not full of sugar. Okay.

  • So we're going to hit a great summer punch.

  • And this recipe is more of a principle.

  • So I want you to get into it and make it your own.

  • First up. Boil a kettle. What we wanna do

  • is use heat. Lets think cuppa tea.

  • Think infusion.

  • When hot water hits things it starts drawing out flavours, okay.

  • So all I wanna do is get about 300 grams of fruit.

  • So today what's in season for me is this, raspberries, strawberries, cherries and blueberries.

  • So lets use a knife.

  • Just to finely slice stuff. Now obviously

  • wanna remove all the stalks.

  • Rattle ya knife through it.

  • You're going to get more surface area.

  • You're going to extract more flavour. Ultimately you want something really tasty.

  • And thirst quenching.

  • But the quick way to do that in modern-day life is a load of sugar and a load of citric acid, okay.

  • That's pretty much, the whole world is hooked on sugary sweet drinks, okay.

  • This is old-school. This is like going back hundreds of years.

  • You grab, y'no some glutter fruit, something hanging off a tree. Whatever's in a bush.

  • Choose a herb. Now there's more frumpy herbs like this. Thyme. Okay. Now just because Thyme's

  • associated with roast lamb and all those savory things

  • That don't matter. Just take some little tips off

  • er, and just put like three

  • just a little bit in there, okay.

  • Choose a herb, get it in there. You know you could use basil, mint

  • all sorts of things. They're amazing for flavour.

  • Just a couple bits of mint

  • is just really really powerful and

  • gorgeous in flavour.

  • Get that boiling away to the hill.

  • And then in we go, and you want about one and a half litres of boiling water.

  • Lets talk about citrus. The skin which often we throw in the bin

  • is full of flavour and oils. Essential oils.

  • Lemon, lime, clementines, oranges, pink grapefuits.

  • You know these are things which have just such wonderful flavour.

  • Just by twisting this there's just squirts of oils

  • essential oils, and

  • that really makes a difference, honestly.

  • So just leave that for 10-15 minutes. It'll cool down a little bit and then I'll show you want to do next.

  • So, 10-15 minutes. It's cooled down a little bit. It's still warm but the smell in the room is unbelievable. It smells

  • like memories of my nan when she'd do these beautiful crumbles and jams like that. So all you have to do

  • is hit this with a load of ice.

  • And then we'll use a little citrus

  • just to give it a kick up the backside.

  • And you only probably need one orange.

  • And half a lemon, okay.

  • So now I'm gonna bling my punch.

  • There's edible flowers that are in the garden that you might not have known were edible.

  • And actually they do taste delicious.

  • If I put it in with the boiling water then you will get flavour. Rose petals, amazing. Elderflower, amazing.

  • Day lilies, amazing. Violas and pansies.

  • So lets just serve it up.

  • And then you have a little try.

  • That is so refreshing.

  • Really refreshing and I can taste stuff.

  • And that is the thing. When you take that sugar out

  • I can taste it!

  • I can taste stuff. If you threw a load of sugar into there you ain't. It's like putting loads

  • and loads of Parmesan into a risotto and you can't taste the peas.

  • It's just a cheese risotto.

  • So for me this is cool.
