This may sound weird, but I really wasn't sure if I liked tomato soup because I've never
tried it. So, I decided to try it and got a little bit from a grocery store and I really
didn't like it. Maybe that's because I got it from a grocery store? I'm not sure, but
when I tried this recipe, I loved it! So, it just goes to show you that sometimes it's
not the dish that you don't like or the food you don't like, it's just the way it was prepared.
You're really gonna like this recipe if you try it.
Heat a large saucepan or pot over medium-high heat and add ¼ cup of extra virgin olive
oil, 1 cup of diced onion, ½ cup of diced carrot and ½ cup of diced celery. You'll
also need 4 cloves of minced garlic, 1 teaspoon of dried basil, ½ teaspoon of salt, ¼ teaspoon
of black pepper and ¼ teaspoon of crushed red pepper.
Stir it all together and let it cook for 10 minutes. Then you're gonna add 2 cans of diced
fire roasted tomatoes and their juice - if you can't find fire roasted tomatoes, regular
tomatoes should be fine - 2 cups of vegetable broth, 2 tablespoons of vegan margarine if
you like and 1 tablespoon of balsamic vinegar and 2 dried bay leaves.
Give it a good stir and bring it to a boil. Cover it, turn down the heat and let it simmer
for 30 minutes. While the soup is cooking, pour 1 cup of raw
cashews into a small saucepan. Add enough water just to cover them. Turn the heat up
and boil them for 7 minutes. Then, you're gonna drain them. Add them to a blender along
with 1 cup of vegetable broth. I use my homemade broth and the link to that video is in the
description box. Blend it until it's completely smooth. This
could take up to 5 minutes depending on your blender, so just let it go until it's completely
smooth. Pour the cashew cream into a small bowl.
Once the soup is done, remove the bay leaves and let the soup cool maybe for about 20 minutes.
You just don't want to put the hot soup in your blender. Once it's cool, pour it in the
blender in batches and blend it until it's smooth.
Pour it back into the pot so you can make sure everything's reheated. Add the cashew
cream, stir and enjoy. This soup is lovely. It really is. If you
