  • Japchae is stir-fried vegetables, mushrooms,

  • and meat with chewy glass noodles.

    多年以前,我有上傳雜菜冬粉的影音

  • Years ago, I uploaded my japchae video,

    但今天我要示範的是小份量的

  • but today, I'm going to make a small portion.

    首先,醃牛肉

  • First, let's marinate the beef.

    部位是牛菲力

  • This is filet mignon.

    如果你是蔬食者,就可以省略這項食材

  • But, if you are vegetarian, skip this,

    多放點香菇

  • use more mushrooms.

    這次我是用牛肉,也可以用豬肉代替

  • So, I'm using this beef, but you can also use pork.

    把乾香菇放入水中浸泡2小時

  • Dried shiitake mushrooms, soak this for two hours.

    就像這樣

  • Like this.

    香菇比較厚

  • Mushrooms are really thick,

    所以我要先切片

  • so I'm going to slice this...

    就像這樣

  • like this.

    如果你是蔬食者

  • So, if you are vegetarian,

    香菇就可以多放一點喔

  • just use more shiitake mushrooms.

    之後把香菇跟牛肉放一起

  • And then, put this in the beef.

    香菇蒂頭也要切片

  • Slice this.

    這裡有一顆大蒜

  • And here, one clove of garlic.

    切碎後加入牛肉內

  • Just add here.

    可以用白砂糖或是二砂都可以

  • Sugar, you can use white or brown sugar.

    現磨黑胡椒

  • Ground black pepper.

    醬油兩小匙

  • Soy sauce, two teaspoons.

    麻油一小匙

  • Sesame oil, one teaspoon.

    然後混合均勻

  • And mix.

    聞起來很像烤肉味

  • Smells like bulgogi.

    放入冰箱內醃漬入味

  • I'm going to keep this in the refrigerator

    再來準備其他食材

  • while I'm preparing other ingredients.

    蛋黃

  • Egg yolk.

    和蛋白分開

  • And egg white.

    蛋黃內加入少許鹽

  • Just a little pinch of salt.

    也可以只用蛋白

  • You can make this method using this egg white also,

    蛋白就像一張白紙

  • make it really white paper like this.

    所以可以只使用蛋白

  • You can use this,

    蛋黃是黃色的

  • but egg yolk is yellow color.

    比較容易顯色,色彩繽紛多了

  • It really stands out, so pretty.

    所以我通常只用蛋黃 (此時鍋子要開火加熱)

  • I always make that yellow paper.

    平底鍋內擦上一層油

  • Wipe off this oil,

    薄薄一層就可以

  • so that really thin layer is coated only.

    之後把火關掉

  • And let's turn off.

    所以底部沒有加熱

  • So, there is no heat.

    但鍋子已經是熱的

  • This pan is hot.

    利用餘溫煎蛋黃

  • With this remaining heat, we're just cooking.

    翻面

  • Flip over like this.

    很漂亮的顏色

  • So pretty color.

    兩面都要煎熟

  • So, both sides is yellow.

    熟了就取出

  • It's cooked.

    放置一旁冷卻

  • So let it cool down.

    這是菠菜

  • This is spinach.

    之後要準備一個鋼盆

  • My final product is going to go in this,

    這是非常重要的

  • very important bowl today.

    當我完成了烹調時

  • So, whenever I finished my cooking,

    我會把東西放入鋼盆內

  • I'm going to put it here.

    開始準備菠菜吧

  • So, first, let's start with spinach.

    把洗淨的菠菜放入滾水中

  • So, spinach is already cleaned.

    燙熟後撈出,約30秒到1分鐘

  • Around 30 seconds to one minute, cook.

    滾水持續加熱中

  • Okay, I will just keep boiling this.

    沖冷後,擠乾水份,再切成小段

  • And then, squeeze out.

    放進鋼盆內,加入少許醬油

  • And then, here, we need to add some soy sauce.

    和麻油

  • And sesame oil.

    這是韓國冬粉

  • This is noodles.

    看看這包裝

  • Look at this size. (giggles)

    這是地瓜澱粉做的

  • Made with sweet potato starch.

    所以你可以在

  • So, you can buy this

    韓國雜貨店買到

  • in Korean grocery stores very easily.

    或是用普通冬粉也行

  • Or, you can use cellophane noodles.

    冬粉煮熟後,看起來

  • So, when you cook this, it looks really clear.

    略為透明且有咬勁

  • Looks like glass and chewy.

    這就是這道菜特別的地方

  • So, that's why, makes this dish very special.

    首先準備4盎司

  • So, I'm going to use four ounces.

    放入滾水中煮一分鐘,並攪拌

  • Okay, one minute later, just stir this.

    搬砧板...

  • Here you go! (laughs)

    再來要切蔬菜

  • I'm going to cut all kinds of vegetables.

    青蔥切成兩吋長

  • Around two inch pieces.

    如蔥白部分較粗

  • If this white part is too thick,

    可以再對切

  • you can cut it in half.

    今天的厚度OK,所以不用對切

  • But, today, mine is good, thin enough.

    2-3根青蔥

  • Two or three green onions.

    再來是洋蔥切絲

  • And then, onion.

    洋蔥非常美味

  • Onion is really delicious,

    大約使用一杯量

  • so I'm going to use around one cup.

    洋菇蒂頭切一點掉

  • White mushrooms, cut the tip off

    再切成片

  • and thinly slice.

    之後要切的是

  • I'm going to cut this red stuff

    紅蘿蔔和紅甜椒

  • so carrot and red bell pepper,

    也可只使用紅甜椒

  • but you can use just only red bell pepper

    或是只使用紅蘿蔔

  • or you can use all carrot.

    紅蘿蔔絲大約是3/4杯

  • Around 3/4 cup.

    將紅甜椒的皮囊切除

  • Remove this inside thing.

    再切成絲

  • Cut this one really nice, beautiful, eh?

    紅色很顯色

  • Red color.

    用的量不多,一些就夠了

  • So, this is just a small amount I'm going to use.

    頭尾千萬不要丟棄

  • Don't throw them away.

    切碎後可以炒飯

  • Chop it up and then make stir-fried rice.

    把蛋黃皮捲起後切成絲

  • And then, the jidan, gyeran jidan, let's cut it.

    全部的材料都切好了

  • My cutting job is done now.

    7分鐘之後,回頭看看冬粉

  • So, exactly seven minutes later, I'm checking.

    捏一條起來

  • This one.

    試吃看看

  • (slurps)

    冬粉非常有咬勁

  • Noodles are chewy.

    完全煮透了

  • Well cooked.

    瀝除熱水

  • Really hot.

    因為冬粉很長

  • These noodles are very long,

    所以我要剪成小段

  • so I'm going to cut a few times.

    就像這樣

  • Like this.

    放入鋼盆內

  • Okay, then, this is our bowl, right.

    所以材料都備好了

  • So, everything is done, we gotta add this here.

    加入麻油

  • Sesame oil, I'm going to use.

    醬油

  • Soy sauce.

    一小匙

  • One teaspoon.

    糖一小匙

  • And sugar, one teaspoon.

    然後拌勻

  • And just mix.

    如果冬粉份量大,可以在另一個鋼盆內攪拌

  • If you make a big batch, you can do this in another bowl,

    但今天只做一小份

  • but today, we make a small portion,

    所以一個鋼盆內就可以完全全部了

  • so I'm using one bowl, everything, like this.

    平底鍋內放入油加熱

  • Add some oil.

    加入洋蔥絲

  • Onions.

    青蔥段

  • And green onion.

    少許鹽

  • And then, pinch of salt.

    翻炒至

  • So, we keep stir frying until this green onion,

    蔥白部分變軟

  • white part is withered.

    洋蔥絲開始變透明,倒入鋼盆內

  • And then, onions look really translucent.

    平底鍋不用洗

  • So, you don't have to wash this.

    再次放回爐火上加熱

  • Let's turn on the heat again.

    加入少許油

  • Little bit oil.

    放入洋菇片

  • And this time, mushrooms.

    少許鹽

  • Also, pinch of salt.

    當洋菇煮熟

  • So, when mushrooms are cooked,

    表面會帶有油亮感

  • a little juicy and shiny, this one.

    再到入鋼盆內

  • Transfer this to the bowl.

    接著再炒

  • Next, red stuff.

    紅蘿蔔

  • Carrot first.

    拌炒20秒

  • 20 seconds, I stir-fry.

    加入紅甜椒

  • And then, this red bell pepper.

    拌炒均勻

  • Okay, done.

    不要忘了牛肉和香菇

  • And then, don't forget this, our beef and mushrooms.

    放入鍋中拌炒

  • So, shiitake mushrooms are marinated

    連同醃汁一起炒

  • with bulgogi marinade sauce.

    這時候聞起來

  • And then, when you cook this, it tastes really like...

    就像烤肉

  • The texture is like bulgogi.

    拌炒到牛肉

  • We have to stir fry this until the beef is no longer pink

    和香菇熟了

  • and also mushrooms are well cooked

    倒入鋼盆中

  • and softened and shiny.

    此時再準備一顆大蒜切碎

  • I will just use one large garlic clove.

    放入鋼盆裡

  • There you go.

    再加入醬油和糖

  • Soy sauce and sugar.

    醬油一大匙

  • One tablespoon, soy sauce.

    糖一大匙

  • One tablespoon, sugar.

    現磨黑胡椒

  • Ground black pepper.

    現磨味道較香

  • This is the black pepper.

    我喜歡加多一點胡椒

  • I want to add a lot

    因為黑胡椒可以提味

  • because black pepper makes it really tasty.

    適量麻油

  • And more sesame oil.

    攪拌均勻後試吃看看

  • (slurps) Mmm.

  • Awesome.

  • Delicious.

    撒入白芝麻

  • And then, sesame seeds.

    白芝麻可增加口感

  • Crispy sesame seeds.

    蛋絲

  • This is egg.

    放入再次拌勻

  • I will just add this here.

  • Oh my, isn't it pretty!

    盛入盤中,再撒上白芝麻

  • And more sesame seeds.

    當人們準備這道派對菜餚

    準備時間快又方便

  • Each ingredient needs different cooking times,

    若是你帶的菜餚,都沒有人碰

  • so we have to prepare these ones all separately.

  • One bite of japchae has so many tastes and textures.
